…and sadly, you’ve loaded it with oxalates. Chocolate is high in oxalates, read “Toxic Superfoods” by Sally Norton, to understand about oxalate overload.

@@celeste-236 1Tbsp cocoa in the batch, eaten over multiple days is hardly loaded. People have an ability to metabolize a given level of oxalates. The problem comes when you incorporate high oxalate food(s) as a staple in your diet and you overcome your ability to metabolize them so you start to store them. Cocoa is a mixed bag nutritionally but IMO it is fine for a once in a while treat eaten in moderation.

This recipe was wonderful( I did add an additional TBSP Coco powder and a pinch of salt). It’s kinda reminiscent of a brownie so I loved it. One thing I hate about other recipes that have almond flower is a lot of them just taste heavily like that…almonds. Thanks for sharing the recipe it’s a home run!

Just made these with chocolate protein powder& chocolate collagen. Added 1/4 cup walnuts, Lilly’s chocolate chips, 1 Tbs. Unsweetened coconut, & 1 Tbs coconut flour. Also 1/2 tsp baking powder. Cut the butter by a few tbsp. Came out amazing! Toaster oven 15 minutes. Thanks so much for this idea! Love your channel & the beautiful new kitchen!

well... I'm going to try with EWP cuz of my dairy issues & I'll report back. But won't be for at least a week ;-) Our summer JUST started yesterday & we are having HEAT for the next 3 days. No oven for now. though I was wondering since I keep air fryer & dehydrator outside during summer - wonder if I could air fry some?? I am a serious newbie to that thing :-/ Have barely learned to reheat in it, OH & chicken skin crisps!! WOW!! But that's it :-( No cookie bars for me just yet. I am on the Oregon/Washington border where Columbia River turns back east/west toward the Pacific after it goes straight north/south for 40 miles or so below me :-) I imagine You are just north of me.?? Sounds like we are in same heat wave now. Happy summer is finally here!! I tried this with cinnamon toast protein powder and some chocolate. It was really good, but the butter was just oozing out of it. Maybe I misunderstood and put in too much. Next time I'll just use 1/2 stick of butter. Still it was really yummy. I will definitely make this again

Yes, the brown sugar sub adds a hint of molasses flavor, especially if you happen to have the Besti one but any one will do! I have not tried with unsweetened powder so I would start with 1 tbsp and then taste the batter to see if it's sweet enough, keeping in mind that after baking some of the sweetness will be lessened.

Hi Anita! These are SO good! I used vanilla KC this time but have the big bag of salted caramel, so that’s next. I cooked mine in my new Ninja Foodi Grill (just to see if I could). I think I may have overcooked them a tad bit b/c they were a little dark, but still delicious. What would you recommend for the baking time in the Foodi? I’m in FL and like to avoid the oven whenever possible 🙌😁👍

I was reading something somewhere (and of course now I can't find it) that if using the Ninja for baking to lower the temp by 25 degrees. I would probably keep the time the same but just check on it every few minutes.

I made some more today - used salted caramel KC w/sf choc chips and unsweetened coconut topped with a little flake salt. I read the same thing somewhere about reducing temp by 25F. So today I baked them in the Foodi at 325F for 10 minutes. They were still just a little dark but taste fabulous 😁

It is better the next day. It is very delicious. BTW, do you know the gram or cups for the scoop of collagen and the scoop of the protein powder? Next time I will add vanilla extract in it since my protein powder is plain. And also one more tablespoon of sweetner.

Yes, definitely they are better the next day! The scoop of protein powder is 30 grams, Keto Chow is generally around 45g, the collagen is about 10grams.

With all the butter in this definitely not for PSMF. I do plan to go back to adding PSMF days in September and I plan to experiment with a bar recipe or cookie recipe. I really remember loving the PSMF kasekuchen I made (it's a German version of cheesecake square). I use 1 package Keto Chow or 1 scoop if you have the big bags. The batter will be thicker and the texture slightly different. I have been using the collagen too but just to get more collagen, it still works without. They key is to not overbake it, take it out when slightly gooey in the middle and let it firm up!

So far every protein powder I've tried is about 30 grams a scoop except for Keto Chow which is around 45g. The 15 g difference didn't seem to matter much, so the recipe is pretty forgiving. Also I have used 3 different collagens and so far they are each 10 gram scoops so I would go with that.

I did use whey protein powder in this recipe, I used Quest vanilla whey powder! Also Keto Chow is whey and I have made these with that as well. I have not made this with egg white powder, I think you would have to add some other ingredients to make it work. I've never tried pea protein powder, not even sure what it is!

Gosh.. I don’t know how Swerve is still being sold.. It tastes terrible. Just and FYI… There are at least 2 other brands of Erythritol sweetener that I have tried that tastes more like sugar and doesn’t have the same cooling effect as Swerve, such as So Nourished and Amson Naturals (my current fav, since sometimes it’s harder to get So Nourished from Amazon.
