Today I’m going to introduce you to gim-bugak (김부각), which is fried seaweed paper coated with glutinous rice paste. It tastes very crispy, airy, savory, and full of the fresh flavor of the sea. Full recipe: www.maangchi.co...

Hi! I love your recipes and videos! One thing that’s interesting now how Korean food is similar to Indian food in the materials used. In west part of India, Gujarat, we made something called Khichiya or Gujarati Papdi no lot…this also used rice flour that’s been cooked/steamed and it’s rolled out and dried. You can cook it over a flame like you did or fry it (you’re right, frying them tastes best lol). Very interesting how some foods might be made differently across cultures but still have the same style and ingredients!

Using your recipe and made 15pcs and sun-dried it for 3days as weather up & down. After frying in oil, it was so delicious...future shall use lesser salt due to the saltiness of the seaweed

Those look amazing!!!! I may have to get a dehydrator .... I live in South Carolina USA and it is always so humid.... they would take 2 weeks to dry out LOL...... but these really have me intrigued.... knowing the flavors of all the ingredients, I can taste them with my imagination. Thank you!

I have to tell the truth. I've been a vegetarian for 45 years, and nori, kombu, hiziki, arame are among my favorite treats. But ever since the Daiichi disaster, I've been afraid to buy any more, because it's all harvested in those seas, regardless of which country harvests it, whether Korea, Japan, Vietnam of China. It took a long time to get an answer from the US DOA, but their final response was that, no, they don't really do much testing for radioisotopes. They told me they just send someone to a local international grocery to pick up one of this, one of that, but no real consistency or methodical testing program because they don't have funding. And of course now, in 2018-2019, still no funding. There is one American company that does some consistent testing for some of the isotopes, both there, and when it arrives here. But the packages are tiny and very expensive, and they're too expensive for me to use as a staple. After Daiichi, they moved their harvest site to the other side of the Japan coast, to be safer, but it's not perfect. I used to eat miso soup with sea vegetables every day for brunch during the cold months. I still have some pre-Daiichi dried sea veggies that I'm saving for something special, and I can't tell you how much I miss my soup and sea veggies. I think it is one reason why I am healthier than my family was. So I'm not sure I want to use such a sparse resource to make this treat. One cannot trust the US government to protect us. Radioactive isotopes were detected on our west coast within two weeks of the disaster. You can go online and find websites that have beautiful satellite, full-color images that tracked the contamination in the sea and air. And Japan is still pouring that water into the ocean. Their attitude is that once it's off their property, it's not their problem any more.

To anyone why does not have a dehydrator or don't want to open dry those seaweed chips, you can use your oven (better to use a convection oven since it has a fan so the drying process is quicker) and put it on 100°C or around 210°F and dehydrate it for 2 hours or more. Keep checking every 15-20 minutes after the 2 hours mark and flip if necessary so that it can dehydrate well. Depending on you oven hotness, decrease the temperature if it starts to brown too fast :) 😊

I thought the oven would work - thanks! Tip: If you don't have a convection oven, use a wooden spoon to prevent the oven from closing completely. This lets out some of the moisture.

God bless you and wish you all the good luck.

in the south of India we make something very similar using rice paste. we call it Arisi vadam. Arisi means rice, vadam means fryums. we add chilli's flakes and salt to the paste while it's cooking itself. my grandma used to make me dry them in the sun. we had to run and get it before it rained. you brought fond childhood memories back. thank you for reminding we are all connected.

I finally made this today! I get 16 gim-bugaks from the same amount rice paste. As I don't have dehydrator every piece got sun-dried. It's so good that I don't need to even care about storing😁 I'll eat them up!! Thanks for your recipe Maangchi! The only tip for those who try this recipe: If you like gim, the seaweed, then about a dozen of bugaks will never be enough for you. (I'm regretting making just 16 bugaks) Try double amount of all ingredients.

Hi Brenda, I'm very happy to hear that you've learned a lot about Korean cooking from me. Especially this gimbugak (Korean seaweed chips) is not easy to make! Impressive! Brenda, your message reminds me of my trip to Rotorua, New Zealand I made several years ago. I met my reader Mere and we cooked and filmed together. www.maangchi.com/blog/gapshida-rotorua
