I work with 45 Korean, and they have me hooked on kimchi, goguma, gaji namul (eggplant with garlic and sesame seeds), bulgogi, kimchi jjigae, and you name it. I am truly in love with Korean cuisine, and the good thing is that I am learning how to cook it myself. Yes, roasted sweet potato is one of my favorites and when you mentioned you had it with your coffee in the morning, that's how I was introduced to it too. But never thought you can eat it raw with hummus, which I like a lot. Thank you for sharing. PS, I just have to say your son is adorable.

Thanks so much for making this video - I watch a lot of Korean variety shows and have often seen folks who are picnicking or camping and enjoying a steaming hot yam (what? no sauce? no butter?!). I rarely cook, but thanks to you, I'm enjoying these myself now for breakfast almost everyday and totally understand why they are called "comfort food".

They are also great in the morning with coffee. I roast a few at a time and store them in the refrigerator in an airtight container (after it cools down to room temperature). Cut into thick slice and reheat in the toaster oven. It comes out tasting so great! Hi Deanna! Thanks for your comment. In general, I try to consume the roasted sweet potatoes within a few days of roasting. Once the potatoes have come to room temperature, wrap it up securely using saran wrap, storage bag and/or an air-lock container, and place in the refrigerator. I like to heat up my cold potatoes in the toaster oven. I cut the potato in half and place it in the toaster oven on high setting for about 5 minutes. It leaves a nice golden crust on the flesh of the potato and sort of creates a natural sugary crust...SUPER YUM! This is my breakfast to have with coffee! If haven't seen it yet, I have a video on How To Make A Single Cup Of Coffee Using The Aeropress. Also, I just released a video recipe on Misugaru (Korean multigrain superfood protein powder shakes). Hi @Paechio. Great question! If you split the potato, it will come out less moist and sugary/sweet. The skin of the potato acts as an insulation, keeping the moisture contained within, creating that moist taste and caramelizing its natural juices inside. BUT, if you cut it in half and bake it, I think you'll still enjoy it. For me, I usually bake 3 to 4 potatoes at a time. Once it cools down to room temperature, I store them in an air-tight container and store it in the refrigerator. I split it in half and heat it up in the toaster, and enjoy it with my coffee. Hi @AngelikaKing 👋 I know, I 😍LUV🥰 Korean sweet potatoes! Another way I also enjoy them is adding big chunks of sweet potatoes and regular potatoes when I make Korean rice. Once the rice and potatoes are cooked, you can drizzle some soy sauce, sesame oil, toasted seaweed, gochujang, kimchi, lettuce, and some soy-bean sprouts side dish. Mix it all up...and OMG....so yummy😋🤤😋 My grandmother used to make rice cooked with potatoes all the time for me. Hi 👋 @traderjoes. These 🍠 are roasted in the oven, uncovered, and placed on the middle shelf of the oven. These sweet potatoes do not need water or foil wrapping. The skin of the potato insulates the moisture within.
