We could not afford organic vanilla extract either however we found that by purchasing a couple organic vanilla beans each month over an extended period of time, we eventually were able to make our own organic vanilla extract in the quantities we consumed. This can also be done over and over so although the initial purchase is steep, it pays dividends eventually. There are many recipes online and they are all essentially the same. Great video, keep up the good work I am just over halfway through your videos now!

Oh Chelsea...what a blast from the past dear girl! I'm sure I've said this before but living in a house with 8 other brothers and sisters AND a step-grandfather, we were NEVER without at least 12 seated at the dinner table. I read some historical novels on occasion...when I have 5 minutes and don't fall asleep :)...and I always felt like the pioneer days came to the Kettel household every time grocery day came as my mother ALWAYS brought in 50# of flour and sugars not to mention all the pounds and pounds of butter, Crisco and whatnot and when the vanilla came out of the box, my brothers thought it was root beer because the container was so big. This was pretty much on a monthly or every other month basis due to the fact that cooking was always from scratch and boy could my mother cook and thank God I did get that talent from her, whew!!! BUT our beans came from the elevator since my Dad worked for the local farmer's elevator so he would bring the beans home from work but they were a big bulk bag as well. Now after all was said and done, grocery day was a HUGE chore because we had to "restock the pantry" and that in itself was a job rotating stock and filling bins, jars and tubs making absolute certain that dates and product names were clearly labeled and heaven forbid if we didn't make sure to insert bay leaves in the flour and bread slices in the sugars. Today I still buy in bulk but NOT quite as big a bulk as then as it's just Jack and I but I still scratch cook, can 3-400 jars of food each fall and freeze many things as well so I would say that Jack and I would be able to survive most any disaster and not starve. I don't ferment asparagus but I do pickle it and do I ever love it, Jack too. I do have a vegetable garden but that is purely for seasonal freshness and I purchase from the local Amish or other roadside produce markets that I know how they grow the product and when canning season begins...Jack and the kids were/are always certain to be out from under as it is a process that I truly love and love to do by myself. I call it therapy but I can't really say why I never want help and there are days when I don't get as much done as I used to with all my limitations but I still have everything processed long before I need to worry about freshness. I will say that there is something to be said for being able to stand back and look at all the beauty in the pantry when I am done putting up product for the season. Meals are so much better when one plans ahead and takes the time to can and freeze their own food. I know it isn't for everybody but I just can't handle store bought tomatoes and vegetables because tin is NOT a flavorful condiment...just sayin'! I do have to buy my kitties food and litter...in bulk packaging but most of my "regular" shopping is done locally at the butcher shop and Aldi's. I NEVER shop at places where I have to pay them to use their facilities but that's just me as I know a lot of folks do use Costco and Sam's Club but I'll keep my canning job because at the end of the day, I'm sorry to say, I CAN tell the difference. I make my own noodles, breads/biscuits and desserts pretty regularly and I buy my red potatoes in 50# crates from the potato growers field. if I want white potatoes, I can go behind the potato digger and pick up the ones left behind but I prefer reds over any others because they don't seem to elevate my blood sugar levels as much as red potatoes are less starchy and for a type 2 diabetic, that is key! I do buy my paper products (tissue, paper towels and Kleenex) from Aldi's and yes...it's the big packages as I don't mess with the small stuff. I never use paper plates and yes, I too wash my own dishes and that's a good thing as I always have dirt under my nails most days or paint on my hands if I'm doing some crafting. Kills two birds with one stone, I can get my hands soaked while I'm scrubbing the dishes and pots and pans. I will put a bit of dish soap on my sponge when I'm doing dishes because I haven't really found a good detergent for suds and I've been doing dishes a long, long time girl as I will turn 60 in August and let me just say...that's a lot of dishes!!! I don't mind how often you post a vlog but I do enjoy them when you do. Looking forward to when you share your pantry with us as you know I only ask to be entertained and enlightened...I am always entertained by you and most every vlog teaches me something and most of the time it is how much "big families" have to share and interact with one another to make all the parts and parcels work within the family nucleus. I feel that our family of 4 missed out on many of the needed skills as there just wasn't as much work to make the family function... our son and daughter were good kids overall and had chores but it was different. Social skills and hard work are needed to survive in the big world and it seems to me that I learned them much better coming from a "small community" like our big family was. Again, that is taken from my perspective, nothing more. I am curious about the kids and okra...what they think of it and how you use it in your daily meal planning so hoping you will update us as yours matures and gets harvested. Thinking about the chickens and what has happened with the Sebastopols . I think your neighbor just can't part with the cute little curly feathered beauties but that too is fine...for him! I will say that it might have been a little more work than you would have wanted on the homestead trying to keep them clean and happy. Just for your information...since you are not posting quite as often, I have started following Castle Hill Garden with Cliff and Diane in the UK. I just happened on him as I was hunting for something to watch one evening and his vlog popped up and he stole my gardening heart from the beginning. I'm sure he isn't going to appeal to everyone but he sure did me as he grows veggies, fruits and flowers. I couldn't ask for anything more of him. I have learned a great deal about propagating and that is something I have always enjoyed but with less than stellar success. You see, entertainment and enlightenment! As fir the Sabastepols the gent with them still hasn’t let me know when he’ll be in town. Chelsea girl...be careful what you wish for would be my husbands advice! If I lived close to you there would be a buzz of chatter that would scatter Hunny and the kids to all corners of the homestead just to get away from the conversation. Growing up with so many other siblings gave me a very fluid gift of gab and I usually keep it in good working order so to speak. BUT I could help you in so many ways that you would be regretting your wish:) You have two mothers already so let's just be glad I am so far in distance but do know that I think about you and yours often and you are in my prayers daily just because I have felt such a connection to the large family unit that those who didn't grow up with have no clue of my fascination. As for missing me...did I go somewhere? I thought I had commented on most of your vlogs but maybe I missed one or two with trying to keep up with both indoors and out this spring. I got in touch with the Sabastapol gent today and he informed me he sold his stock to another person and had lost my number so wasn’t able to let me know. Fortunately I know where he’s located so my plan is to track him down at the next farm fair. I’m on a mission, dear Vicky!

This was super informative. Thanks! I'd love to see your pantry next fall and the root cellar whenever. Hugelkultur, yes, please. That asparagus looks delicious. I'll try it! You might like preserved\fermented lemons. Quarter the lemons the long way, but don't cut all the way through the bottom. Open them like a flower, and pack with Kosher or sea salt (not iodized). Pack the salted lemons very firmly into a non-metallic container. As you pack them, they will start releasing juice. If there isn't enough juice to cover, add fresh lemon juice until all the lemons are covered (or just squeeze them harder in the container). Cover with a lid or secured cheesecloth. Place in a dark place for about 4 weeks. They'll last for years and years, getting better with age. Use the well-rinsed peel in any recipe that calls for lemon - I usually mince it. (Start with 1/4 of a lemon rind and adjust to taste.) If food were an orchestra, and lemon juice a flute, then the preserved lemon peels would be French horns. They are amazing and taste like summer to me; I always have some on hand. BTW - this does _not_ work well with limes - I tried it and was deeply disappointed. Meyer lemons, on the other hand, are excellent preserved this way. Weren't you talking about growing a Meyer lemon in your greenhouse? Or am I mistaken? PS - Don't feel guilty about doing the best you can in regard to the pads. We do what we can, as we can, to the best of our ability. No apologies!

Just found your channel...great information...so wish you tube was "alive" when I was raising my four sons...not a lot of alternative information out there in th 70's and 80's...but there were some good books and they were helpful...now that I am semi-retired I look for ways to be frugal and healthy...the mindset of the young people involved in being prepared and being thrifty is wonderful! Hi Chelsea: Interesting to see how similar our bulk storage is. Ghee is my main stored cooking fat other than renderings plus 2-4liter cans of CPV olive oil. And I have over two years supply condiments, 8- cooking wines, 7- vinegars, 8-salad dressings,?- sauces ( South Asian, European, South western, Caribbean, steak, seafood, mustards, Ketchups, HP, Lea&Perrins, Chinese, Japanese. etc. ), pickles most acquired off the 1/2 price rack every time I go to Safeway. Dry bulk 20 pd. assorted pasta, 50pd. 3 rice's, 20 pd. 3 flours, 20pd 5 dried beans 10 pd. dried vegetables, 5 pd. 6 salts, 20 pd. 6 sugars, 20 pd. coffee etc. About 20 cans each of stock (beef, chicken, fish), mushroom soup, corn, tomato sauces, milk (evaporated, condensed, coconut, soy, plus 10 pd. skim milk powder), meat and 50 cans of fish mainly smoked (clams, mussels), tuna, salmon, assorted sardines. Over 100 spices, dried herbs seasoning blends, curries etc. But mainly use one of 20 blends (Italian, Taco, Tex/Mex, Montreal steak or chicken, lemon/herb, Caribbean ( 5 types), Greek, roast pepper/garlic, Chinese 5 spice, curry, etc. Then there's the chest freezer ( full) Meat, fish, vegetables, 1/2 liter tubs of extra portions of cooked dinners ( chowders, stews, soups, pasta mixed, rice dishes, other casserole type dishes, stocks, fruit etc.) and some Ice cream. Cooking for one I have leftover portions each time I cook; one for tomorrow, the rest into the freezer to be reheated in the future. I probably have over 50 of these meals. But do take them down to the freezer on the boat for lunch or when I am out boating. There is also 4 - 1 person months of dry goods, canned and frozen food on the boat at any given time. Plus snacks for when I can't leave the helm with 2 thermoses of coffee and any empty bottle. At home is also the fridge/freezer for limited opening and the bar fridge/freezer in my kitchen for multiple daily opening. Well that's more than enough to read about a food hoarder in one session. It also applies to tools, books, and anything I might need some day. the old guy Bert

I do like this kind of video, it reminds me of my own pantry goals and gets me thinking about what I'd like to accomplish this summer. I usually can tomatoes that I buy in bulk when they go on sale. Last summer I THINK I canned almost enough for the entire year, I'll know in about a month or so. I'd been working on getting myself there for three years and I THINK I finally did it! I still have 12 500ml jars left! WOOT!! I'm not sure if I'll even be canning this year. we're moving to a house up north (a wee little village near Minden ON, lakes and Canadian Shield EVERYWHERE!! *swoon*) but we're moving RIGHT BEFORE my canning season! if I can get us unpacked fast enough to be able to take a bit of a breather I might have enough energy to can. last year I did two family's worth of tomatoes- for reference last year my 'family size for a year' was a smaller-than-I'd-wanted ten flats of 12 500mL jars. I did twice that. took me two weeks! I was exhausted and I couldn't stop grinning! I kept hobbling on my poor swollen feet over to my beautiful stack to admire it! this year if the stars align I'll be doing 7 flats of tomatoes and 6 flats of a rough thickened-by-boiling-down spaghetti sauce base. if I can get RERALLY motivated I might do some jam or pickles. if not just the moving TO A HOUSE WITH LAND AROUND IT IN THE WOODS is enough for me! everything's coming up Hazel! :D

Ok... I can breathe now.... I always hold my breath between LMR videos🤪 I just purchased some asparagus starts to plant as well as more grapes, rhubarb and another apple tree. Thats just a few of the permaculture type varieties we are including here with more stone fruit trees to be added 😎

You are such a busy lady, how do you do it all? I would like to bulk buy but there are only 2 of us. It is really hard to break away from using plastics sometimes. You should try making your own vanilla, you only have to buy the beans and the alcohol and you can make it as you need it. Its way cheaper than buying it and then you know its organic as long as you buy and non GMO alcohol. You also might want tocheck out Rain Country's videos on her vinegars. She makes all different kinds.....for cooking, cleaning, and washing her hair with. Very informative, she just made one out of cedar for cleaning and shampooing her carpet. Your asparagus looks amazing. My favorite pickles are fermented pickles. We use to make them in crocks when I was a kid. Mom use to put grape leaves in her pickles to keep them crisper. God Bless

I LOVE my menstrual cup. I know it can be difficult to teach kids that but for you. I will be tactful- but I never “got to know myself” well, and was never something I enjoyed, so if I can use a menstrual cup, anyone can. It does take a bit of trial and error as we’re all built a little different and different shaped. No guilt- you do great! There’s a time and a season for so many things in our lives! Sure hoping to do better at storing stuff! We’re hoping to store onions and potatoes this upcoming year! I’ve done canning but not a whole lot with storing. Often I store things in the ground... we’re zone 7-8, so I just use mobile hoop houses and I can get at my produce most winters.

As a guy I obviously don’t use them but I have heard great reviews about them. The initial awkwardness can’t be much different from changing baby diapers for the first time. In a preparedness sense, they are the best, even if you only keep it as a backup solution.

My theory about fermented foods is that it takes a little bit of time for your gut to taste, recognize, and then begin to crave that particular thing. If you're not used to it, it's a bit weird, but once you've had a few doses, your body recognizes it and suddenly demands MORE.

Very glad to have discovered you. I grew up on a farm, but it was in a hot and humid locale and i am drawn to, and now live in, the Pacific NW. Unfortunately, though, I am in the suburbs and I miss the space, privacy, and quiet of the country. Your farm, in that beautiful location and climate, is a dream to me.

P.s. I recently learned about menstrual cups. I guess they have been more popular overseas but are becoming more so in North America now. You might check into that, but, whatever you decide, you shouldnt feel guilty doing the best you can at the time. :)

I love making fermented asparagus!! I put garlic and a pepper mix I made. It is SO good!! I also have found you can mix a lot of veggies up and they lend their flavors. Asparagus, carrots, zucchini, garlic and a touch of ginger is delicious!! So happy to have this bulk buying info! I have been looking for something in my area, hoping I can find a distributor and a couple other people!

Hey Chelsea it's food to see you 😊 I hope your family is well. I know this is the time of year when we're all pretty busy. I agree with you, buying in bulk on items you use is a really good thing. There's no sense of wasting food and money just to store things which won't be eaten. I try to make a monthly menu of meals in my head (actually partially in my head, and actually scribbled down in shorthand on a pad). Then I'll compile my grocery list, this truly has saved us money, and time because I don't have to figure out what to make for a meal just before meal time. Have you tried making your own organic vanilla? I've made it several times, and store it in a dark cool place. All you need is large canning jar, 10 vanilla beans, and organic vodka. The recipe is pretty easy, and you'll need about 1 month to store it in a dark cool place, and the vanilla is ready. I'm happy you have tiur garden planted. We're still dealing with too much rain here to get things done.

I love this! I always feel guilty using disposable products too (if I’m being honest it’s more from a budget stand point than environmental, as selfish as that sounds. It kills me to waste part of our tiny budget on things I’m just going to throw away 😕). I cloth diapered the first two kids but I can’t seem to make them work with my third. It’s just one diaper rash after another! As for feminine products. The diva cup has been fabulous for me and way less hassle laundry wise! It took a little getting used to, to place it but now I really like it!

My sister has been trying to convince me to try a diva cup for ages but I haven’t gotten around to it. Now that you’ve mentioned it too, I’ll get on it and order one. Mulch is working well! My heart is a little broken at the moment about my garden, though. We got frost the other night and burned off many of the squash leaves.🙁 I don’t think it killed anything outright, but it set the garden back a few weeks, for sure.

I’m so glad to hear it’s working well! Hay is so easy to come by for mulch on a farm! I thought about buying straw before I tried the hay but it isn’t in the budget and it’s all sprayed around here. At least I know our hay fields have never been sprayed in anyway! It gives me peace of mind and it’s abundant. That’s so sad about the frost. Weather is such a tricky factor! I hold my breath every time a storm blows through praying the wind doesn’t rip off all the fruit and the hail doesn’t wreck the plants. Inevitably, every year we get crazy hail when the garden is still so fragile. I hope your plants bounce back quickly ♥️

WE did cloth diapers when we hit our most extreme poor. They were a literal life saver! We found eco disposable after that and I started using the inserts from the diapers as pads. I found a lady local to me who makes cloth pads and I will never go back! Broody Chick Diapers is where we got our biodegradable disposable diapers, they have bulk options too

I think many people don’t really have that much variation in their own cooking, so relatively few items can complete the pantry. I know your list consists of normal items. From a preppers perspective it’s of value to meal plan around ingredients that can locally be produced, while everything else is considered a luxury. Use what you have and have what you use. We are often emotionally and “in the moment” driven, which leads to plenty of food waste. Good meal planning includes using open containers first. Looking forward to your pantry and root cellar.

I hang a small cloth/tissue with citronella oil on it, I also put a smear of oil on light globes, when the globes heat up the aroma permiates - mossies hate it

I laughed so hard when you said we wouldn't want to do this with beans and rice. Ha!! That's what we eat around here with no animal products or oils. I've done this bulk thing for years starting way back when I had a big family at home. When we moved out to the country, I found I couldn't buy my bags of beans, rice, and oats in town either. Costco is a dream from another life. Now, the UPS driver is my Costco or rather Santa Clause. I love that guy. So, I order my #25 and #50 bags online. Shipping is usually free when ordering a minimum amount. We eat all we can from our garden and buy the rest from the farmer's market or grocery store in our small, quite distant town. I too went to disposable diapers with my last child. One person can only do so much work.

People were calling me crazy because my house looks like a miniature grocery store come winter. But with us having a household of 8 and we own a lawn care business it's okay. I keep a list of everything we go through on a yearly basis and buy according to it. I have had to increase our list a little cause I'm one of the volunteers at our church that will help cook for a funeral. But we have a Sam's club and a GFS close by so that helps in buying bulk items. I will even make menu plans. I'm hoping to do more canning and preserving to cut expenses back even more. I had a friend say there is no way you go through 100 pounds of rice a year. I said come back in six months and when they came back I had 1 fifty pound bag left. But we're buying next month extra of certain foods like beans and rice and shelf life almond milk because several farmers in our area are predicting were going to have a very cold winter come after the holidays. And it's already showing signs that they're right. And I want to get extra that way if we do go with out power I have food I can cook on my gas stove and such. But living on a lawn care income for 11 year's you keep track of everything cause of the budgeting and rebudgeting and in the end you know. But buying in bulk does help.

Little Mountain Ranch I'll give you an example. 120 boxes of cereal. 40 25 pound bags of flour. 72 boxes of the 100 count tea. 340 cans of green beans. 300 for us 40 in case I help cook for a funeral. And the list can go on. Homeschool I make menu plans and sometimes I have to change them for like if I'm volunteering at our church food pantry or if we are going to be going to a friend's house. Example is on the 20th of this month we went to an Amish canning party. I didn't have to cook that day but I brought homemade cornbread for the bean soup my Amish friend made. She had a lot of apples to can so me and my daughter's helped can. There was 60 people total there the men were splitting firewood for the family we brought our log splitter with us because the Amish there are not allowed to own them. But we had two log splitters going. They split 40 ricks of wood while all us inside help can over four hundred jars of apple sauce. She has 11 children and it was a blessing. Days like that. And we have another one to go to on the 10th of November so I'm making a homemade cake and cookies for that.

I tried making fermented cabbage (sauerkraut) but couldn't decide if it tasted good or off. Perhaps I just needed to give it another go. I threw it out. Will try again and keep your tips in mind! (PS, do you slice your cucumbers in disks or wedges when you ferment them?)

With your concerns of plastic for feminine products, there is a product that is reusable made of silicon. It is washable. I have never used it but Rachel from Brad and Rach, she talks about it quickly in Q&A part 2 I think. She is an eye dr and has been using quite a while. FYI. To help with your guilt 😜😃😊

Yes, it is like Kombucha but you use honey and green tea instead of black tea and sugar. I don't think that Horizon ships over the border, but I have heard of other places that are similar in the US... I think you're best bet is to go talk to your local health food store and find out who they use. Usually larger distributors will ship to smaller groups (as in, a group of you and your friends) and offer free shipping for orders over 1000.00 which is really easy to reach, even with just a few people. That's what we are doing here and it works really well. If you head the group up you can even change a small fee which can add up if you have enough people. Good luck!
