For those who don't like peppers big beef tomatoes are great stuffed too. They bake wonderfully well in the oven. I always kept the tops of my peppers and tomatoes to pop back on like lids. The kids loved opening their own little pots. Its always fun watching how everyone cooks, thank you for sharing

Can't wait to try this recipe! I grew the Adjvarski peppers this year on your recommendation last year and they truly are AMAZING! The plants were very productive, yielding multiple large peppers per plant. They ripen over the course of the season, not taking all summer like red bell peppers. I've been roasting them and adding to my pasta sauces. I also just used them in Ball's "Balsamic Red Pepper Jelly." OMG...they taste SO good in that recipe.

after my grandma picked her peppers she made this dish and we ate it all week. add some greens steamed then fried with garlic and a little rice to the meat,sauce and cheese and you have all 4 food groups packed inside a pepper.

I took your advice and quit canning different varieties of tomato sauces and just canned one basic sauce which can be customized for different uses once opened, great time saver! I did add chopped basil because we love basil on tomato sauces and soup. Thank you for this yummy recipe. I know what we’ll be having for one dinner this week. Blessings.

Yep it’s a major winner! Made this tonight with a spicy Italian sausage and all mozzarella with pablanos. Used my home canned tomato sauce also! With a side of shells/pasta! My husband is still raving about it!!! He told me “iron chef meal”!!!

If you still have tomatoes try making tomato chips! They are wonderful! Just sprinkle with Italian herb mix and cheese then dehydrate! We love them! Have even made them with green tomatoes. Love the pepper recipe! Wait with little patience for your video’s!

They look very good! In Mexico we have something similar, they are called Chile’s rellenos. And in September, when is the season of certain kind of ingredients, we make something special called chiles en nogada with nut sauce

Sarah if you dont have a food saver I highly recommend it. It would vacuum seal those peppers so much better than you can with plastic wrap.they would easily last a year in the freezer with no freezer burn... not that they would go that long without being eaten!

Hi Sarah. If you like Mexican food, try this with a bit of hot sauce in with the meat, finely diced Chorizo sausage , and use pepperjack cheese. Nice bite to it.

Sarah, Looks wonderful... I will give this one a try. Just a side bar note: When I seal a zip lock bag I zip it shut, then reopen the middle and give it a little vacuum suck before resealing the zip again. Just the way I do it. Love you guys. Blessings.

Thank you Sarah. Your recipe is a little different than mine. My Hungarian mother-in-law gave me her recipe for stuffed peppers years ago. She puts chopped pepper in the stuffing with the chopped onion. All the rest is about the same. Thought you might want to try that. I have found through the years quite a few people leave the pepper it cooks in. I don't know why. I love them. I cut mine up and eat it all in one bite. I have never cooked spaghetti as a side though, will have to try that. My family pours the sauce over mashed potatoes and we have garden green beans as a side. Try that. God Bless

I love Leggs!!!! We have it here in Minnesota too ! I use the mild mix for sausage meat for pizza and the breakfast 1 for biscuits and gravy.
