Low Carb Keto Recipe: Peanut Butter Cup Eggs

Everywhere you go this time of the year you can not help but see peanut butter cup eggs. These Low Carb/Keto Peanut Butter Cup Eggs are great for that peanut butter cup craving.
Low Carb Keto Recipe: Peanut Butter Cup Eggs
16 oz jar Natural No Sugar Peanut Butter
3/4 cup (100g) Confectioners Swerve
1/2 tsp Vanilla Extract
pinch (1/8 tsp) Salt
2 to 2 1/2 (340 to 425g) cups sugar free Chocolate (I used Lily's)
2 tsp Coconut Oil
Melt chocolate and coconut oil in a double boiler (bain-marie).
If you have silicone mold, coat mold with melted chocolate then set in the fridge to set.
While chocolate sets in the mold, add peanut butter to a mixing bowl. Heat peanut butter in a mixing bowl for 20 seconds to make mixing easier. Add confectioners swerve, vanilla extract, and salt and mix well.
Once chocolate is set in silicone mold, add 1 Tbsp of peanut butter mixture to each egg mold. Allow enough room to top with chocolate. After each egg mold is filled with peanut butter mixture, top with melted chocolate, then place in the fridge to allow chocolate to set.
If you do not have a silicone mold, scoop 1 Tbsp of peanut butter mixture and roll into balls and place on a parchment lined cookie sheet. Place the cookie sheet with peanut butter mixture into the fridge to set. Once set, dip each peanut butter ball into melted chocolate, then gently tap off excess chocolate and place back onto the lined cookie sheet to set.
Once chocolate is set, enjoy.
