I almost cried a bit. And I don’t cry at much. To see Daniel and John work so hard to get everything up and running. To see the first whiskey run on the new still. And to be a part of it in a small way every month with Patreon. I’m so happy to see it. I’m hoping I can make a trip to Austin from Buffalo soon and visit the MB home base. Cheers MBs!!

Love it! Beast of a still. I'd love to see how you mash the wash (grainbill and tempratures) and how you'd ferment it to create a low-wine aswell. There is a number of ways to impact flavor by grainbill, mashing, yeast strains and temprature of fermentation, way of distilling it and ofcourse aging which are very interresting to learn more about. I never could have imagined whiskey would change my life in such a significant way. The timing of how everything just clicked, becoming curious about whiskey, finding the whiskey vault and then helping to build a distillery and create whiskey?! I've made connections with people all over the world thanks to the #WhiskeyTube community AND even have my own whiskey channel because of it. I'm also amazed at how Daniel and John put together that mega-Ikea project to put the still together, it's rare for Rex to give Daniel props but that was clearly hard earned. I'm looking forward to seeing the new still in person later this year and having some good whiskey in good company.

Really nice Still. Glad you all got er up and running and look forward to the next still install. It's difficult to decide what to do. Go for quantity or different styles. So next still could be a continuous or a different style still, moonshine, to add to the flavor profiles you could get from barrels after aging. I think it would be cool to have 3 or 4 different design stills and run them all with the same beer. Barreling each separately. Then later you could use barrel strength and do blends of styles. A small 8in continuous would require 24hr babysitter for 2 days but even a small 8in one in 3 days you're looking at running 2000 gallons of beer at 8% is 245gal potential total alcohol at 62% Heads lose 20 gal? So 225 gal if you run 35gal an hour through a 8in column continuous still for a 57hr run time. Plus heat up and cleaning. The liquor should flow about 4.2 gallons an hour? By the way. When the continuous is running you can run the other still too. Making a few extra batches over night. So Instead of 1 batch a day in the pot still. You get 3 batches a day. Potential in 3 days of 7 batches from the potstill and 225 gal finished through the continuous still. And if 15gal kept from each potstill batch at 62%, 105 gal from it. Fill barrels how you want. Probably get more then 225 gal finished from the Continuous. But those are minimum numbers. Once the continuous is running you could just go direct to a 53gal charred barrel for 3 barrels 3 15's and 4 5's plus a gallon to play with . For potstill 1 53 and 3 15's and 1 5 gallon. Plus 2 gallons to play with. Make that run once a month you'd be putting up to age every year 48 53's, 72 15's, and 60 5's a year. Toss a few 30's in there to level out the years till ready and the 53's start being ready. Because after 5 years and you can start cracking the 53's you probably will have dropped filling a lot of the 30's, 15's, and 5's. And will only be opening 53's from then on. And with 48 53's to open in 5 years you're production would be up to 43gal a barrel so 203 fifths per barrel. 9752 fifths the 5th year. $40 a bottle a gross of $390,000. Just from running the 2 stills 3 days a month. The next years all go up, as you slowed on the smaller barrels so should have a few more larger ones. And hopefully, started running more then once a month. Do it every 2 weeks you double your 5th year gross. But you also have to have someplace to store 200 53 gallon barrels for the 5 years. Or 450 barrels if you run every 2 weeks. Plus the 30's, 15's, and 5's. Waiting the 5 years is why most run the continuous for Vodka too. Make it earn it's keep.

What a truly beautiful piece of equipment, It must be so satisfying to have come from small stills to being able to assemble that in your own place and make your first run with it! I will admit, watching the guys assemble the still, I'm not entirely sure what I would enjoy more, planning/making my first batch in a device such as that, or putting the toy together in the first place!
