I discovered Khao Soi while traveling around Chiang Mai on a motorcycle. A wonderful elderly lady was selling Khao Soi from a small shed next to the highway in the middle of nowhere, cooking from a huge pot and serving it to lorry drivers and others passing by. It still is one of the best things I have ever tasted in my life. I didn’t speak Thai and she didn’t speak English but that didn’t matter. She knew I loved her food and she kept it coming. She was so sweet and so loving, and an absolute brilliant cook. That right there is one of my all-time favourite holiday memories. Unexpected and so wonderful.

This is my new favorite kitchen tool! Day 1 I was going to pressure cook a meat kzbin.infoUgkxG-7WiT7ocumjytOpHDFt632PL0pxXRAg and potato stew, decided I wouldn't eat it that night so I went with a slow cook so I could go to bed and put it away in the morning. I love that versatility! The sauté feature works great and adds tons of extra flavor to dishes, and I can easily sizzle meats in the bottom then deglaze for some restaurant worthy flavors.Big bonus - you can cook a whole frozen chicken in about 2 hours. Amazing! I've seen a couple videos, haven't tried it yet, but I will soon!

I love your recipes and over the years quite a few have become family favorites but I must say that I do miss your earlier videos. They were not as slick and generically professional but your presence and natural charm really shone through in the early ones. Thai noodle soup, look so delicious, I like Khao Soi soup, because it similar to Cambodia chicken curry, Cambodia chicken curry can serve with steamed rice or Khmer noodle (Nom Banh Chok) also

The ultimate spot in Bangkok does a twist on this where they fry the noodles after they're blanced, in pork fat. It adds the most amazing umami bomb. Oh man, the recipe shows 1/2 sugar. I thought that meant 1/2 cup but based on the image it looks like 1/2 tb spoon 😢. Good things I only added partial. Other than that it looks good. Thank you for the recipe!

I can only find frozen won ton wrappers online which will have drefrosted by the time they are delivered no doubt, would it be safe to refreeze the completed wontons made from defrosted wrapper? Also would defrosted egg roll wrappers be safe to refreeze as again i can only find them frozen online. Thanks forr the recipes, i do love to try Thai food even if i am a chilli wimp.
