Hi rakesh bhaiya, in my house i make adai mavu same but i add horse gram coconut green n brown pulse n grind it. Sometimes i add nethi leaves or drumstick oeaves in that. Generally i ve jaggery ir nattusakarak qith that along with that what ever chutney sambar or millakai podi. . But. My dad says combi with jagg is super. Thnks for such a wndful recipe. This reminds me of my mom making excellent adai. She always wanted to make adai in the kadaai. Since the batter will soak itself in oil and cook crisp. Her adai can ve called masala adai I feel after seeing this recipe now. We use kadala paruppu in the machine while making Sambar powder. It removes the powder stuck in the machine. It kind of washes and brings out the powder from the machine. My mom would seive the paruppu, soak it adding rice and make adai out of it. It used to be amazing. Those days no refrigerator. So grind and immediately fresh adai with butter/ghee. Next day adai with finely chopped onions in the batter. It is such a nostalgic taste 🤗🤗🤗😋😋😋 I'm grateful to you for bringing me this memory today

We used to make with 2measures rice, half measure toor dhall, half me. kadalai paruppu,1,table spoon ulutham paruppu, little cocanut. yours is very nice,i will try like this. 2nd day we will mix onion in leftover adai maavu and make sanyasi urundai or kunukku.☺☺

Our proportion will be some what different with rice and dhal. If we talke equal quantity of both rice w takee Thor dhal and chenna dhal both together which equals quantity of rice. Of course we also take little quantity of paid paruppu and ulundhu

It's just the difference in chemical reactions in food that is referred as Food Chemistry. When raw ingredients are first sauteed the flavour and individual components and nutrients are emanated post ingredients coming in contact with the cooking medium. When you grind ingredients raw there are some chemical reactions that take take place even before you add it to the cooking medium - for example certain chemical bonds form even before it is exposed to heat treatment. You yourself can find the difference when u grind tomato onion gravy - grinding all ingredients plus raw tomato onion and then adding to the oil will give out a different taste and aroma and sauteing all ingredients with first - like roughly chopped onion tomato and garlic in oil and then grinding post cooling will impart different flavour to the gravy( onions caramelize only when sautéed). Also, when raw foods are exposed to air they get oxidised. That's why the minute we expose the cut surface we try to cook it as soon as possible. So, definitely there will be flavour changes in the recipe outcome for the methods u have mentioned
