Jennifer was seriously impressive in this one. If you mean 7:35, it's the cartilage in the lobster claw that he pulls out not plastic. When he talks about the plastic he means the plastic wrap covering the ramekin (the little ceramic pot) burnt/melted off in the oven so it didn't trap the steam when cooking the mousse and steam it properly.
