Ingredients and Measurements:
2 cups all purpose flour
1 cup unsalted butter (you may use salted if you wish)- 2 sticks
2 and 1/4 cups evaporated milk
1 cup orange soda (if you don't want the soda, add 1 more cup of milk and 1/4 cup more sugar)
1 cinnamon stick (broken in 1/2)
1/2 tsp. freshly grated nutmeg
1 tsp. vanilla extract/essence/any extract of your choice
1 cup sugar (white or brown)- use more or less depending on tastes
1/3 cup raisins
1/3-1/2 cup maraschino cherries

Hey Matthew, nicely done! Two questions please? How much elychee would you add to this and what do you think about making this with instant cream of wheat?

Maybe 1 tsp. Elychee. And yes you can use cream of wheat. But play around with liquid because it will absorb more. Maybe almost a cup more.

Thanks for watching. Yes some families use eggs or custard powder. But the recipe that was shared with me didn't have eggs.

Maishah Ali Ramdeen - I beat the eggs and add to the milk mixture... bringing it to a low boil and simmer for a bit for eggs to cook through.

I've never liked Sirnee before but I made this for my sister because of Eid and my family said it's the best they've ever had. So then I tasted it and couldn't stop eating. Thank you Matthew!

Hey Matthew, love your recipes! I'm having such a hard time with this one though. When I add the flour to the butter- it gets clumpy, it doesn't get the liquidy texture.

Which kind of butter are you using the stick butter is real butter (different than the butters in the tubs). If you use the tub butter it is ok. Just make sure its on a low heat and mix the liquids in well after parching.

I used the stick butter but by the time I'm finished adding the two cups of flour- it gets clumpy. Not the liquidy texture you have in the beginning.

This one has mor butter content. And parsad is traditionally made with ghee. Also this has nutmeg, the combo of milk and soda. It is also stickier than regular parsad

I love the color yours came out... great tip about the slow heat. I've always had mine at a higher heat and it gets brown easily. I also add orange zest.

Wow so nice yummy. And no lumps I tried your pera it came out so perfect. So the liquid is right, flour and butter sperate parched?1st you added butter in the pan then milk and the rest?? Thank you very much

Yes you heat all the wet ingredients, patch butter and flour, then add all wet ingredients and stir.

Yes. You may need to drizzle in some more milk or soda though. You will see as you stir it up

You have to mix it very very hard. Also you can sift the flour when you add it in

Any will work for sirnie. But I usually use publix brand or pillsbury. I have used the five rose before too

You can make this maybe 1 day before you’re going to serve it. It stays for a couple of days in the fridge. I wouldn’t make it way in advanced and then serve to guests though.

Similar however parsad is traditionally made with ghee and made for Hindu functions while sirnee is for Muslim events.

Great...sirnee looks great... ... as a Muslim girl my ajee taught me how to make this...My advice to you, next time instead of sugar we use Condensed Milk.. also we add the spice and clove to the butter 🧈 to release the oil...trust next time will taste better... We do the same to our curries too...
