PUMPKIN PIE BITES | easy, healthy, homemade recipe
1 (15 ounces) can pumpkin puree (2 cups)
1/2 cup coconut milk cream (scoop the cream from the top of the can)
1/2 cup real maple syrup
2 eggs + 1 egg yolk
1 teaspoon ground cinnamon
1.5 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
1/2 teaspoon kosher sea salt (this is my favorite)
Crust
2 cups raw pecans
1/2 cup unsweetened shredded coconut
1/4 cup real maple syrup
2 tablespoons coconut oil
1/4 teaspoon kosher sea salt
Pre-heat oven to 350 Fº
In a food processor combine; pecans and coconut and pulse back and forth until they have broken down. You want to have a consistency similar to sand that sticks together when pinched between your fingers. Be careful not to over blend or you will end up with nut butter.
Add in the maple syrup, coconut oil, and sea salt. Pulse again until everything is well combined.
Line a 12-cup muffin pan with cupcake liners (you can use paper or silicon liners) + 4 cups of a second pan (or work in batches since the recipe makes 16 minis in total).
Divide the nut mixture as evenly as possible amongst all sixteen cups and then use your fingers to pat them down in each cup to form a crust for each mini pie. Set aside.
Filling:
In a large bowl combine pumpkin puree, coconut milk/cream, maple syrup, eggs, egg yolk, cinnamon, pumpkin pie spice, vanilla extract, and sea salt.
Use a hand mixer to mix until everything is well combined.
Divde the filling as evenly as possible amongst all 16 muffin cups.
Pop into the oven for 30 minutes or until set thorough. Cool completely and then transfer into an airtight container and refrigerate for a minimum of 6 hours.
Serve topped with whipped cream and an extra dash of cinnamon.
Makes 16 mini pies.

Is it possible to substitute the coconut milk cream with anything else? It isn't easy to find it in my region.

You can use condensed milk but may want to cut back on the maple syrup a bit.

@@CleanandDeliciousDani Related question: can I whip coconut milk to make something like whipping cream that would substitute the coconut milk cream? There are some brands of canned coconut milk that are a bit runnier or liquidy than others and sometimes I cannot find the full-fat ones. For instance, if it's OK to mention brands: Goya brand and Roland brand are runnier; Conchita I find it's the best, fattier one. Do you have a suggestion for a canned brand that does have that coconut milk cream on top? Furthermore, I have this idea that whipping runnier coconut milk with some coconut oil could result in cream. Would this work? I'm looking forward to trying this recipe for Christmas (we don't really celebrate Thanksgiving here in Latin America). Oh, and one last thing, I'd love to substitute canned pumpkin with roasted fresh butternut squash, which is more readily available here. Thank you so much!

Would you recommend to soak these raw pecans for 3 or 6 hours before? I read that helps to rid off toxins and digestion.

This was amazing! I substituted the coconut in the crust with dates and used half pecan and half walnuts, and no maple syrup inn the crust as the dates were sweet enough. My mom loves a pumpkin pie but is allergic to coconut. So thank you!

Hi Dani! I made these for Christmas and they were so delicious! The texture is exactly like a regular pumpkin pie and the maple syrup gives it just the right amount of sweetness! I’m not the biggest fan of pumpkin pie but I can’t stop eating these. Thanks for the recipe! Saving this one forever!

So excited about this recipe! I wanted to find something to take to a thing where a few people are celiac, and I'm allergic to dairy, so I wasn't sure what to make (dairy free is easy, gluten free is harder). This solves both, and it's fall festive! Also thanks for the tip about putting the extra coconut milk in smoothies--I can't tell you how many half-used cans of the stuff I've had go bad, not knowing what to do with the rest. Oh and one thing I learned about those silicone muffin liners--they stand up on their own! So if you don't have a muffin tin or only have one, they can also stand up on their own on a cookie sheet.

I made these for 2 Tday celebrations and they were a huge hit! So yummy, so simple. I found the mix made 18! I used coconut whipped cream which was prefect. A flexible spatula worked great for a mess free crust squishing. I also appreciate pumpkin recipes that use an entire can of pumpkin! I added 3 whole eggs too, didn't separate.

For future baking adventures, you can use a tart tamper to quickly and evenly push down the crust. In addition, an egg separator would be helpful as well. Thank you for the hot tip with regard to getting a 4--cup mini food processor. The mini pumpkin pies look moist and delicious!

I just love your cooking. You are so easy-going with us. Precise not harsh. A lady (older like me) in my Church adored your pecan pie bites when I sent her the link. She doesn't do things that take any heavy wrestling like a turkey so that was perfect. I will make the pumpkin cupcakes. I just couldn't hear the name of the creamy topping crown you put on top. I don't hear very well for quite awhile. Now I'm 76yo and my friends don't anymore either! Thank you again dear Lady!

Love it ! Trader Joe's also sells cans of coconut cream, the whole is nothing but coconut cream. And Trader Joe's is the most inexpensive place that I found cans of pure coconut cream at.

I just bought two cans of organic coconut cream. There was no separation in the can. It was just a thick version of coconut milk.

I just made these last night for Thanksgiving. They turned out so well that I had to come on here and thank you. In place of Maple syrup I used date syrup because that's what I had on hand. It worked out just fine. These were very good! One tip I have is at they will turn out beautifully If you use silicone cupcake molds. I even used a silicone mini bunt mold for half and they were beautiful. I think these may not come out of a metal pan very well or even paper liners, although I didn't try it. Clean and healthy CAN be delicious!

Pretty Brand Eggs aren’t dairy. They are from chickens not cows.

Hi, Dani. I made those today. Everything was amazing before putting the pies to the oven. The filling tasted divine, the crust was absolutely delicious. I was so ready for a success. I did everything according to the recipe and took them out couple minutes earlier only to find out several hours later that the crust is completely burned... I am devastated to say the least and now I have nothing to bring to a potluck party tomorrow. I was wondering if you have an idea how I can avoid this next time? Do you think it could have happened because I substituted dates for maple syrup in the crust? Or something else?

Definitely going to make this. I think I’d just make a whole pie in a glass dish. After cooling, it goes in the fridge to set overnight. Less work. 🥴

I've never had or made a pumpkin pie with coconut oil and coconut cream, I'm curious to try. Can you taste the coconut, with all the other flavors mixed in? Anyway, thank so much for your hard work and for posting the recipe early in november, plenty of time to try before the holidays!

You really don't taste the coconut much! When I served this to friends only one person could detect the coconut in the crust and no one could taste it in the filling

I made these last night and can’t stop eating them, SO AMAZING!! I only had one cup of pecans so added a cup of walnuts and they were delicious! Thank you! Will definitely be making for thanksgiving :)

Good question.... I would start with two and then look at texture. You want it to be rich and custardy but not too thick. If too thick add a third.
