This homemade English toffee is chocolatey, nutty, and has the most amazing dark caramel at the bottom. It's not a chewy caramel either; it has a nice crisp bite. A bit of advice: don't be shy with that vanilla and salt. They add such an incredible flavor to this candy!

I lived in Ireland for 17 years and I made Christmas cookies every year and the favorite Christmas cookie I made was this recipe. But what I do is I chop my nuts up real fine sprinkle them onto a cookie sheet then I make the mixture pour it on top top of the walnuts and sprinkle chocolate chips over the top let it sit for 10 minutes then take a spatula and spread the chocolate out let it cool then break it I'm making some now yummy

I remember taking the L to downtown Chicago and then to Marshal Fields. They had a candy shop, everything homemade right in the store. And I loved the toffee. Incredible. Chicago 1963.
