Here’s me and my 82-year-old Mum showing you how to make some delicious, crispy seed crackers that are ridiculously simple. They make a great snack either on their own or dipped in something like tahini or guacamole. We’ve flavoured these with the Middle Eastern herb mix za’atar, partly because we love it and partly in honour of my late Dad who adored za’atar and ate it practically every day of his life with toast and a good olive oil.
Here’s the recipe we used, but do play around with it and add the herbs you like:
1/2 cup flax seeds
1/2 cup chia seeds
1 cup water
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1/4 cup sesame seeds
1 tablespoon of a good salt (I use Himalayan pink salt)
1/4 cup za’atar (optional)
1 tablespoon caraway seeds (optional)
How to make:
Combine the flax and chia seeds in a bowl with the water and leave them to swell up and form a gel (at least half an hour).
Add the remaining ingredients and combine well.
Spread out in a thin layer on a baking sheet covered with non-stick baking paper. (If it's non-stick, you'll have to grease it first)
Cook in the oven on 140°.
After half an hour, remove from oven, score the mixture into rectangular shapes, flip them over and return to the oven for another half an hour or until crisp.

Your Mum is much fun and beautiful! Yes, we do have salt and vinegar potato chips in the US. From now on they're crisps to me. But I have been to Canada for fish and chips, but we call that version of potato French fries here. I just have to make the seed crackers. Now I need some Zaa'tar and pink salt. Thank you so much for posting. I had all the ingredients for these and made a batch straight away. They are very tasty and go great with cheese. I've tried a few low carb cracker recipes and these are the best. You didn't specify Celsius or Fahrenheit but as you sound English I presumed Celsius. I have a fan oven so adjusted down to 130°c and they cooked perfectly.

Thanks Ladies - from a little island off the US coast where we do most of our shopping online - what’s the proper correct name of that jar of your secret ingredient - the seasoning mix - the transcript has it spelled several ways - I’d like to order some but need to know the actual name - Is it ZARTAR? Or Zaa’tar or what ? Pity you didn’t hold the jar closer to the camera so we could read the label. Thanks again! Okay - I managed to find it Za’atar - made with Hyssop in Palestine… ordered some. @@PeppermintWellness - Thank you! Yes, I had never heard of this ‘spice’ before and was interested in trying it. Out here on the island we have to order a lot of things on-line because the local grocery provides all the ‘basics’ but not the ‘exotic’ items. We have a lot of Brazilian and Jamaican options - bcoz we have a lot of people coming from those populations here - but not so much from the Mediterranean cultures. I already use all these seeds (most of them) to make my breakfast and only this week suddenly realized they would also make tasty crackers if I would just heat up the oven and bake them probably. Thank you again.

How long can the 'jellied' mix last (in the fridge or out) before it needs to be baked?

Hi Karen, I can't say I've really experimented with making them sweet so can't help much afraid but I'm sure you'll be able to fine-tune it to taste just how you like it! It doesn't really need egg white to stick together.

It’s actually sold in some supermarkets these days. Otherwise you can buy it in any Middle Eastern store or online. Or just leave it out or substitute another herb you have to hand - they’ll turn out just as delicious.

I've just tried it and the whole batch got super glued to the parchment paper. I had to throw everything away =(

Oh no!!!!! I'm so sorry you had to throw it away Paula! The recipe specifies non-stick baking paper as otherwise it will just stick to it. I've amended the recipe so that bit is now in bold lettering. Hope you'll try it again (NB. if you only have normal baking paper, you'll just need to grease it first).

Could be Barb! I think it does vary quite a lot depending on which Middle Eastern country it comes from.

I think that there is a mistake in the ingredients list as 1 tablespoon of salt is way too much..I had to throw them out and start again You probably meant 1 teaspoon?
