My Japanese friend Tomoko taught me how to make traditional miso soup when we were in University in the aughties. She told me that mixing in the miso after removing the water from the heat protects the probiotic in the paste. Boiling water destroys the nutrition but leaves the flavour intact. Stopping the boil before mixing in the miso is therefore a critical step that you must remember to take.

Yes mirin can substitute for sake but mirin has already sugar in it, I would recommend to reduce sugar by 1/2 tbsp in this recipe : ) thank you !

Sake doesn’t only add flavor but also dilute the sauce so I would add sand part of water : )

Miso paste itself is always vegetarian 🙂 Some 'instant' miso soup packets aren't suitable for vegetarians because they contain bonito flakes (dried fish). If you buy pure miso paste (this looks like white - shiro - miso), you'll be fine! Hope that helps 😊

Fact - Only thing tofu lacks is fibre. Why do scientists find it weird? Soya is bad according to Americans. I love soya beans or grains. We used to have soya porridge with milk. Yummy.

The background music in itself is awesome jazz, but I think a less energetic jazz/slower tempo, or fast but less loud brass sounds would be a good vibe while watching someone cook. Think like a nice walk, not a flashy show. If that makes sense 😅. It kind of makes me antsy instead of relaxed and focused on you cooking, my attention is getting pulled by those musical runs. I love the jazz though! Keep up the jazz! And I love the videography and the cooking sounds. The end product looks amazing, and this may be our dinner!

Oh wow, what gorgeous food, and so simple and healthy. Everything about that meal is something I crave. Thank you. But sadly I can’t subscribe because I have a cognitive disability that means my brain can’t cope with the sound of fast music playing in the background of videos where there’s other sounds. It’s especially bad when music is competing with human voice, but I love peaceful cooking videos where I can enjoy the sound of just cooking, chopping, sizzling etc. And worst of all, my least favourite music is jazz! 😂😂😂 It’s frantic, repetitive and discordant to my ears. I feel dizzy and nauseous. I watched the whole thing with the mute on, so it was a silent video for me, because I can’t subtract music from videos. Please would you consider making videos with no music? That way, music lovers can add their own music from another device, while the cooking video plays. Bless you and hope you get more subs in future - as I said, the food looks wonderful.❤

This looks great! Such a shame the phytoestrogen in tofu is so maligned while the actual estrogen in dairy is ignored even though it's the one that increases hormonal cancer risks. Anyway, thank you so much for posting

I am not sure but maybe it does only on people who are not Asian. I am Chinese and we eat tofu. There were many centenarians in my family. Many people eat tofu in Japan too. The life expectancy is very high there.

Tofu not being good due to phytoestrogens was debunked years ago. The problem being us silly westerners taking something good for us in high doses as a supplement. Low breast cancer in Japan can also see this debunked.
