1 cup cold unsalted butter (226 g)
1 1/2 cups granulated sugar (300 g)
2 eggs cold
1 teaspoon vanilla (5 g)
1-2 teaspoons red food gel
1/4 cup cocoa powder (21 g)
1 teaspoon baking soda (6 g)
1/2 teaspoon salt (2.5 g)
2 Tablespoons cornstarch (14 g)
2 3/4 cups AP flour (330 g)
2 cups white chocolate chips
1 cup milk or dark chocolate chips
400° (205° C) 8-11 minutes

Salt is what reacts with baking soda or baking powder. No chilling necessary

What is the difference of food coloring and red food gel?

If you are using powdered food coloring in a recipe that does not contain water as a solvent You will find patches of pigment as it is not 100% soluble. Gel colors are suitable for food that does not contain water. It mixes well with the ingredients. and easy to use And if you make desserts with 2 or more colors The gel color will not absorb into another color.
