This recipe IS DELICIOUS, I make it during Christmastime with Ritz crackers, it's totally Yummy! The only thing I've changed and that's personal taste, I omitted confectioner sugar and instead used dry cranberries sliced in very tiny pieces. It's all ready sweet enough with coconut flakes, its your preference of course. I've learned ALOT through this channel, thank you for sharing your recipes!!! OnePotChef Rules!🍓

I love this No-Bake dessert where all the ingredients are safe to eat because nothing is raw. AND even though its a pretty dense ball the flavors are light compared to the traditional Christmas brownies, cookies...and that Zod aweful fruitcake...lol. Thanks so much David! Loved you latest creation. I made them. Want to say that I took your idea and added to your mixture finely chopped sweetened fruits you use in making fruitcake and chopped pecans instead of the peanuts. Really nice taste treat. jmo

I have made these with mandarin oranges maraschino cherries red and green cherries at Christmas time plus the pineapple along with it aside it. My mind went to every sort of fruit that this could be made with and I love them all! I love the pineapple ones a lot because I love pineapple cottage cheese and I think pineapple lenses sell very well to a little bit of salt and Tang from cheese.

I adore you, OPC! Merry Christmas to you. Going to the beach sounds lovely for Christmas. I live in south Texas, so it is pretty warm here for most Christmases, but not quite warm enough for the beach this year. I love pineapple so I am going to make these "snowballs" with chopped macadamia and Brazil nuts instead of peanuts. I think that will make them extra tropical. Maybe some chopped dates thrown in would also be good. Looking forward to your next recipe!

I just made these. Only thing I would do different is put the mixture in the freezer first before rolling into balls. Even an hour in the fridge it was still soft and mucky to roll. The chef was right about the unsweetened coconut though. I only had the sweetened on hand but it made them very sweet. I am sure I will eat them though lol

I think even my dad(who boogers everything new) would be convinced to eat these, especially if I subbed in crushed vanilla wafers for the peanuts(He could main-line pineapple, that man). I will have to teach you how to make my great-grandmother's and my grandmother's and my mother's cold plates. It is a lovely plate of food that is all served cold and we eat them off in the summer. We had snow three times before Thanksgiving and during Christmas it has been 50 degrees Fahrenheit now it has dropped to 34 degrees. No snow in the next week or so but when we do get snow we get it in feet not inches usually.
