Back in college, I had a vacation job in a cheese shop. Some of the wheels we'd get in -- Appenzeller, for example -- would be above 300 lbs! We'd score the cheese all around with a knife to get through the rind (and, hey, that knife with the little "hook" at 0:23 would've been a great help!). Then we put a thin wire in the cut and wrapped the ends around some wooden handles -- anything above pencil-size will work. I've worked in a couple different recognized pizzerias in Chicago and had to do this multiple times while working, except not to the expertise of this man haha. Opening and shredding a 50lb block of cheese this large can be nerve wracking because I did not have those tools as shown in this video I was using an 8in Chef's knife very carefully. After so long you learn to do it efficiently and safely.
