I can't speak for other people; however, the Mediterranean diet is the one that works for me. Moderate amounts of red wine, and lots of olive oil which does not clog your arteries. Any kind of fat that is liquid at room temperature is relatively safe. You start needing to be careful when you eat butter. And as for margarine and shortening: forget them. You might as well put melted-down Tupperware in your food. Keep it natural. If you notice in this recipe, there are lots of vegetables. Cooked tomatoes are good at fighting cancer. I don't know what's in the peppers; however I do know what's not in them - a lot of calories. So really, the only questionable fat in this is the skin on the chicken. Having said that, I got it straight from my nutritionist that the low-fat diet that was so popular in the 90s is not necessarily good for you. Eating too little fat will cause constipation. That's my rationale for leaving the chicken skin on.

All I have to say is WOW!!! I tweaked it a bit. I used chicken bouillon instead of salt and I added the red wine to the sauce, instead of to the chx. I also sautéed the veggies in the same pan that I sautéed the chx. I used avocado oil for the chx, set the chx aside and dumped the avocado oil and added EVOO for the veggies. The browning left in the bottom of the pan with the garlic put a lot of flavor in the veggies. I also used thai hot peppers, only because I love the extra spice. When I make your dishes, I actually eat them the next day (except fresh fish dishes), because the meats absorb all the flavors. That's just me. I'll probably make a Greek Salad tonight to eat🥰Thank you for sharing❤

I have this in oven as we speak.I didnt use green pepper,yellow-orange-red.Used Merlot wine,dont know if it makes a difference? Forgot fresh basil,used dried. My mother from Naples, Italy used to make this with red wine vinegar and not wine. She also used the same veggies and tomatoes, and also used a jar or Giardinare, which are Italian pickled veggies. I have to give it a try with the red wine.

Thank you. Made it tonight...eating it now while typing this. Turned out great. Wife and kids seem to like it. I Will def make this again. For the sauce, I used two pounds (about 8) Roma tomatoes (peeled), one 28 ounce can of tomato sauce (great value Walmart), crushed the tomatoes by hand as seen in the video, and then added about 3/4-1 cup of water (it was too thick) and stirred. Followed the rest of the directions. I had to cook the sauce and the chicken a little longer than instructed. Cook time in the oven only took 45 minutes.

I haven’t had this dish since it was popular in the late 70s. I thought I’ll have some again. My partner made and canned some cacciatore sauce. I made it. It was so darn delicious. Looking at this chef’s version, with wine and olives, yum!! I’m going to make some again. PS: I noticed the pan he used to put in the oven wasn’t the same baking pan when it came out. That’s TV for you. Nonetheless I’m impressed with his version of chicken cacciatore.

As I type, I am in the process of making this. My chicken browned so nicely, and the sauce smelled wonderful! It's all in the oven now. I plan to serve this over pasta. I am so looking forward to it! Unfortunately, the baking dish that I started making this in was too small, so I had to change part way through. I'm sure it will still be good, though.🍝🍷

I once made a fried chicken cacciatore. Yes, you read that right, with corn and semolina breading. Wasn't able to use olive oil for the deep fry itself and settled for safflower but it tastes pretty great.

I made this and it was delicious! I think you kinda have to know your way around the kitchen to get this recipe right though. 6 bell peppers to 1/2 onion isn’t quite right - more like 4 bell peppers (red, yellow, orange, green) and a large onion or two smaller ones. I was also more heavy handed with the wine and salt (I guess it depends on how salty your tomatoes are and how heavily you salt your chicken and flour). I didn’t have fresh thyme (used dried) or basil (used some from a tube) and it was still great! It’s hard to find the cured olives that he uses, but they are so good in this dish; honestly I would skip the olives unless I could use the cured ones. It’s a great dish for a crowd and pretty economical to make. You can make a pasta side dish or just serve it with salad and bread. You’ll want some good bread to soak up all the goodness!

I don’t make cacciatore but I make something very similar. I cook the chicken but I don’t flour it, and then I deglaze the pan with the chicken out and put the onions in and garlic and all the other ingredients. And then I put the chicken in the pot and add the tomato sauce(crushed tomatoes) and add my herbs and spices. And let that simmer for like 2-3 hours and then I fish the chicken and shred the chicken and put it back into the sauce and it becomes like pulled chicken and it goes good in sandwiches and pizza

That's why I commented as I did, because I thought it was cool how the pan completely changed from going in and coming out. It didn't matter to me how or why. I just needed the info on making the dish. By the way it was absolutely awesome too.
