Subscribe to my KZbin channel: kzbin.info 👉For collaboration feel free to reach out at smny19@yahoo.com Instagram: @sonyasprep Recipes: 🚨Passover Main Dishes 🍲 Passover Soup Recipe: Chicken bones Dark meat chicken 2-3 large potatoes 2 celeries 1 Zucchini 1 onion 1 tbsp salt 1 tbsp onion soup mix 2 tsp cumin 2 tsp coriander 2 tsp garlic powder 2 tsp onion powder 4 bay leaves Sauté the cubed dark chicken meat with bones. Add in all the cubed veggies and season with the seasonings listed above. Add water to fill the pot. Cook for a minimum of 2 hours. Add eggs to soup about 1 per person and shoot off the fire to not overly scramble the eggs. 🥩 Passover Minute Roast: Add 1/3 of a bottle of your favorite BBQ sauce, season with Salt/Pepper Ave garlic powder. Cover with foil and bake for 2 hours. Uncover, Slice, and the remaining BBQ sauce over the top. Cover and bake for an additional hour. 🐓 Passover Garlic Confit Chicken: Make a paste using garlic confit, 1 tbsp of paprika, 2 tsp of Salt, 1 tsp of pepper, 2 tsp of garlic powder. Place onto chicken and season again over the top if needed. Spray with cooking spray. Place the chicken into a 350F oven for 1.5 hours covered and 1/2 an hour uncovered. 🧄 Garlic Confit: Place 3 heads off peeled garlic in an oven safe bowl. Season with cumin, coriander, s/p. Add oil to cover. Bake at 350 covered for about 30 minutes. 🫑 Stuffed Vegetables Recipe: 2 lbs ground beef 3/4 Cup short grain rice raw 1 tomato shredded 1 onion shredded 1 apple shredded .5 cup tomato sauce Parsley S/P In a pot, place 1/4 cup of oil, bones, small can of tomato sauce. Fill with stuffed vegetables. Add water till half way through to the top. Cook for 1.5 -3 hours. 🚨Passover Appetizer Recipes: Short Ribs Recipe: Add a squeeze of half a lemon and mustard to the ribs and smother with the dry rub below. Dry Rub: 1/4 cup brown sugar 2 teaspoons sweet paprika 1 teaspoon salt 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/4 teaspoon pepper Bake at 300F for 3 hours. 🍕Kosher For Passover Pizza Dough: This is a very versatile recipe. Can be used to make bagels, rolls and pizza crusts for dairy pizzas as well as meat pizzas. Recipe: 2 cups matzah meal 1 cup water 1/2 cup oil 1/2 tsp salt 1/2 tsp sugar 4 eggs In a Bowl mix Matzah Meal, sugar & salt. In a pot heat water & oil until boiling. Pour over dough and mix. Add in the eggs 1 at a time. Mix . Let the dough rest for 10 minutes. Place on a cookie sheet and bake at 375F for 35 minutes. 🚨 Kosher For Passover Desserts: 🥚Pavlova Recipe: ‼️(Recipe Below is for 1 pavlova. If you would like to make 2 as I did in the video you would double everything below.) 4 large egg whites room temperature 1 pinch salt 1 cup of sugar Preheat the oven to 300°F. Place your meringue into the preheated oven, then immediately reduce the temperature to 250°F. Bake for about for 1 hour to 1 hour and 15 minutes or until the meringue is slightly cream in color and feels dry and hard on the outside. Turn the oven off and allow the pavlova to cool completely in the oven, about 3 hours. 🥗 Passover Salads: 🚨 Passover Salads: 🌿 Chimichurri Sauce: 1/2 Cup Neutral Oil 4 Cloves of garlic minced Juice of Half a lemon 1tsp of Sugar S/P Dill Cilantro Parsely 🍆 Boyjon Recipe: Roast an eggplant on all sides over an open flame. Scoop out the flesh, allow to cool. Add crushed garlic and salt to taste. Purple Cabbage Salad: To shredded cabbage add salt, pepper and mayo. 🥕 Carrot Salad: 4-5carrots shredded long Add dill, 4 crushed garlic, 2 tsp sugar, dash coriander and cumin, ¼ tsp black pepper, 1 tsp salt, ¼ c oil, ¼ c white vinegar. Massage with gloved hand to marinate/soften carrots. White Dressing: 1/2 Cup Mayo 2 Garlic cloves Lemon juice Water S&p Dried oregano,cilantro 🍰 Passover Dessert: 🥮 Sponge Cake Recipe: 9 Egg yolks 1.5 Cups of sugar 6 Tbsp of water 1/4 Cup fresh lemon juice 3/4 Cup matzah cake meal 3/4 Cup Potato Starch 9 Egg Whites at room temperature 1/2 tsp of Salt Beat yolks, sugar, water & lemon juice together until light and fluffy. Combine cake meal, potato starch & gradually add to egg yolk mixture. Beat whites & salt separately just beyond soft peak stage. Fold egg whites gently into batter. Pour into un-greased pans. Bake at 350° for about an hour. Dear Sonya, it has been a very long time since I had people at dinner and even a longer time since I had guests for the Seder. But, this year I was lucky and I happened to stumble upon one of your organization and preparations videos for Pesach from a few years ago and I loved so much your order that, when I was asked if the Seder could be done in my apartment, I felt confident enough to say YES. And, as per your suggestions, I started almost two weeks ago, getting organized with my meal plan, and everything I had to prepare and I built a schedule for each day, knowing what I was going to do or to prepare on each day. It has worked as in a dream. I was relaxed and I received so many compliments that I had to share them with you, because you are the reason for my success. All looks delicious ! I am hosting, as I always have been doing all my adult life ! Both nights (I think it is a mitzvah to have less religious jews around who would not do much otherwise ) I went from cooking traditional Sephardic food from North Africa from my family recipes, to more conservative simple American food; Makbuba, artichoke salad, lemons and turnip salads with harissa spice, Msoki (beef stew with tons of vegetables cut very small, lot of spinach and fava beans, spiced with mint , garlic and rose) a lot of fresh vegetable salads as you do too. That was a tremendous amount of work, and now that I do not have my little helps around to cut the vegetables anymore (gone in yeshiva) , I do things more simple.This year I am cooking a lamb shoulder in the oven, with potatoes/sweet potatoes with fresh rosemary, asparagus and cauliflower , many cooked and fresh salads, and limoncello/pinacolada sorbets....We are more fruits and sorbets for desserts than cakes and cookies for Passover. But I also make matzo ball soup and matzo brei in the morning, served with cream. My favorite has always been matzo/butter/honey in the morning with my coffee ! (what I was having in Jerusalem on the terrace ....) Happy Passover, Pessah Kosher vesameah to you and your family Sonya !

I dampen a paper towel or kitchen cloth towel and then put it under the cutting board and it stays in place while chopping. :)

You can also use chicken WINGS for soup - not only are they less expensive, they are packed with healthy collagen! That's really just for broth, there's not much meat so you just strain everything and you can freeze in batches for cooking or eating as soup later. I am making both seders. I'll make brisket, turkey tenderloin, matzaball soup soup, quinoa-stuffed bell peppers, sweet potatoes, and lots of salads (israeli, cabbage, hearts of pal/avocado, and whatever veggies look good at the market). I'm definitely going to make your ribs now!! CHAG SAMEACH!!

I like putting thin sliced tomatoes and sweet onion on white fish filets, with a little salt n pepper, they come out so moist and delicious after they are baked. Thank you for sharing all your ideas and recipes. ❤

I am very lucky, my daughter has taken the stress of the sedurim from me. I help with the shopping and such. I was in awe of the kosher store you went into. The variety there and the prices were awesome. A jar of mayo this year was 10.99. We live in a relatively small Jewish community. There were no spices in the stores this year, very little matzah, potato starch and such. I loved the idea of the stuffed veggies, we are ashekenazi so we can't do rice. What could we sub for it? Chag Pesach Sameach. May you and your family have a beautiful holiday.

Looks very yummy an inspires me to make some, helpful hint here - try putting a bath towel under your cutting boarding and it will stop moving around so much when your cutting, have a great rest of your day!
