I made it yesterday and it turned out so good! As suggested by one of the reviewers, I reduced the amount of sugar in the batter to 80g and in the icing to 20g. The cake tasted sweet enough but I couldn’t get the creamy and fluffy consistency of the egg and sugar mixture as shown in the video. It worked but I only had enough batter to make the 6 inch cake and no extra. For the icing, using less sugar allowed the cream cheese taste to come through so it’s tangy and sweet, which we loved since icing could be overly sweet. The cake needed to cool down for 1-2 hours before putting the icing on.

Hi! I find your recipe videos really relaxing and informative❤ I really appreciate your channel and your delicately made recipes with every detail explained. I have a couple questions: If I don’t use a mixer, but do it manually, will the cake fail?😅 I just don’t have a mixer Can I only add baking soda, without baking powder? Can walnuts be more chunky than in the video? Can I use a grater for carrot? Thank you so much!

I make this cake in autumn every year. I live work in China. But,.. I make this into tiny cup cakes. It’s easy to freeze. Very good recipe. Perfect. Sometimes , I add chopped raisins. But I soaked over night then chopped. This is a great basic recipe. Try it. It’s really good. 👍. Thx you for sharing this.
