Cornmeal Porridge, Healthy, Hearty & Creamy (Jamaican Cornmeal Porridge with coconut milk)

This Cornmeal Porridge is so absolutely delicious!! It's rich, creamy, smooth and healthy! Quite comforting
Ingredients
1-2 cups cornmeal
4-8 cups boiling water
2 cups water for mixing
3 bay leaves or 2 cinnamon sticks
1/2 cup vanilla lasco (optional)
1 cup coconut milk (or milk of choice)
Pinch of salt
1 tbsp vanilla essence
Pinch of grated nut meg
Condense milk and sugar to sweeten.
Use recipe as a guide

You have blessed me with this video, I pray you continue to provide these for us all. My mum passed away 12/ 2023 and I have been craving food from our culture but did not know how to prepare them. While grieving I ate food that was artificial and not healthy, then one day I brought the cornmeal and told myself I will make it. After it sitting In my cabinet for some time I finally found your video after skipping others (I’m particular on thinness and consistency of porridge) yours look exactly how I like it. I have never thought to use Lasco, but I add my dark ingredients first like sugar and vanilla essence and lighten it up with almond milk and condense milk

Always had it growing up before school too with bread, and I still love it. But this one blew me away with 1 ingredient that was not included when I ate it as a kid...that Coconut Milk. I will most certainly make it your Jamaican way with Coconut Milk this Saturday.🤯🤩😋😋

Polenta gives a similar texture to cornmeal, you could also make an oatmeal porridge, or grits, or even a peanut porridge, but if cornmeal is substituted, it will no longer be called Cornmeal Porridge.
