So for these types of stalls, do they only have a set number of clean bowls they use for the night? Or is there an opportunity to clean them for the same night?

mostly they will clean it, some street stalls are connected to the sewer/clean water system and electricity or has a kind of "dishwasher", especially those stalls on a pick up Kei car.

I believe the vendor is showing the camera person the soup base, before pouring the pork broth. It looks like a dark Miso paste, soy sauce, and MSG.

This looks like Ponta, theirs is chicken broth ramen but they add chashu pork in top. They also have Miso broth ramen

So I've been binge watching this ramen stall videos, and I'll tell you all right now, that noodle crate was what i was always telling myself that all other ramen stall owners should have. Cos believe it or not, it kills me everytime they get several orders at the same time and one bowl will have more noodles than the other. It's like when you're having a haircut and the barber just keeps snipping on one side, like dude make it equal! So infuriating! Haha
