Check out Wild Pastures burger joint in Boulder. It’s grass fed, no seed oils, mostly organic. Fries cooked in tallow. You might be able to partner with them

The restaurant industry is littered with new concept failures. The average customer is not that intelligent, nor are they intelligent about foot. As nice as an "animal based" restaurant would be, it is doubtful that it would garner the customer base necessary to keep it financially viable. Restaurant profit margins are razor thin. It is better to skip the restaurant scene and cook at home using select quality whole food ingredients.

11:49 "they probably change the oil out everyday" have you worked in fast food? When oil runs low the solution is to just add more, not to change it. It obviously depends on restaurant but very few places will ever change it daily. A lot of carcinogens (acrylamide and aldehydes) form when heating oil that hot, over and over again but there aren't really many studies on how fast food and not changing oil could contribute to cancer. If you want fried food make it yourself, especially if it's something with potatos or starches.

I used to repair fryers in chains like Chilis, Miller's Ale House, Bahama Breeze....not high end restaurants exactly, but not fast food either. Their oil was DISGUSTING.....the OP is correct. We'd change the filters and the oil looked it came out of an engine it was so dark and contaminated. The secret ingredient to where it doesnt go rancid? Silicon Dioxide....says so right on the box. They'd never change the oil, just top it off like you said. Im real skittish about eating out after working in these kitchens..

It has been studied in China. Tucker Goodrich talked about it in an interview - can't remember which one but he may reference it on his blog. It's something about lung cancer being caused by cooking seed oils in non-ventilated homes, if I remember correctly.

Thanks for producing this. I've only heard of this chain recently; they are opening 2 stores in my City. I was unaware that there was such an overwhelming amount of additives in todays fast foods. I suppose it's entirely up to the consumer to decide what is best for his/her health to decide how much of this type of food to consume. This industry, & the health authorities, will allow these foods to continue being produced this way, just as long as there are buyers out there. Count me out of being a regular customer to these type of chains.

October 2012 husband and I are in Manhattan. We see a long line around the block for a restaurant chain. Obviously that spikes our curiosity, and we look to see what it is: Shake Shack. Hadn't heard of it. The next day when the line is shorter, we try it out and fall in love with their burgers. They taste way better than other fast food burgers! Back then, they only had locations on the East Coast, so whenever we were in NYC, D.C., Miami, we always got a SS burger.

I’m not a fan of bread in general… if you are going to eat bread, I would opt for sourdough bread with as few ingredients as possible. Ideally, sourdough bread should be made with only salt, water and organic flour

Then there must be stabilisers and emulsifiers, and if they suddenly removed it from sale, I wonder if they can see some law suit coming down the track? People need to learn about the pleasure of cooking their own food. I haven't eaten anything made in a factory for years and I cook every night. I stick the radio on and get stuck in. It's like therapy after a days work and very enjoyable. And I wouldn't expect a doctor to be interested in my health, only his wealth. The only place you'd be able to sell a high end grass fed burger is LA unless you could actually keep the same price as Shake Shack, even though $30 is atrocious! I'm not sure the population, at large, is educated enough about the perils of seed oils to see the benefits of frying potatoes in tallow. But honestly, it's your money Paul! I would love to see the concept as a pop up or food truck first maybe to see how it goes. I always love your fast food reviews though and this is another great one!

I would love for you to make a truly healthy “fast food” place. Would be hard to launch, but I would definitely try it
