The second episode of our Easy Thanksgiving Menu for Two Series is all about potatoes.
Paula prepares two kinds of potato dishes: one with sweet potatoes and one with Yukon Gold. One is roasted with garlic, the other is au gratin in a cheesy bechamel sauce, and both are great alternatives to skip the traditional mashed potatoes.
SWEET POTATOES
1 extra-large sweet potato, cut into 2-inch pieces
1 tablespoon olive oil or canola oil
½ teaspoon salt
Black pepper to taste
1 teaspoon finely chopped garlic
1 tablespoon fresh chopped parsley
AU GRATIN POTATOES
3 medium Yukon Gold potatoes, thinly sliced
1-2 garlic cloves, minced
2 cups Bechamel sauce
¾ cup shredded Cheddar cheese
2 tablespoon chopped fresh parsley
¾ cup panko crumbs
1 tablespoon olive oil
