Great recipes. For Easter I take the cooked egg whites and dip them in traditional Easter Egg dye then when dry fill with favorite filling.

These look fantastic! I do a version with minced pickled shallots, a little horseradish in the mayo, with a sliver of jalapeno and crumbled bacon on top. Love the idea deep-frying the whites.
