I lived in Huelva, Andalucia for 4 years and this was an almost daily lunch dish for me. After being a chef for 30 years, this is still one of my favourite dishes...and not just because it involves no cooking at all! The people in Huelva - a rural area - called it Salmorejo instead of - like the rest of Spain - gazpacho and it was always served with jamon de Serrano and chopped, hard-boiled eggs and crusty bread. I was so glad to see you using this recipe as, while peeled cucumber was in all the recipes in Huelva, elsewhere it was excluded and, often, bread was added. I asked every abuela in my pueblo how they made theirs and, as a result, I now use the same recipe as you.

Ah! I was wondering if Salmorejo was going to be commented on. That Córdoba specialty is such a great meal. Diced Jamón and quartered hard boiled egg, passed around as a garnish with chopped onions, peppers, cucumber. First had it in Córdoba when the temperature reached nearly 110F - 43C by 1:00PM.

Salmorejo and gazpacho might be similar, but they are not the same thing. There's no cucumber, pepper, or onion in salomorejo, and there's a LOT more bread. The texture of salmorejo is almost that of a dip. Meanwhile, gazpacho is often made without bread, is usually very liquid and can be served in a glass.

Salmorejo is tomatoes and garlic, and bread which is simpler than Gazpacho. And honestly there are many variants of it but never seen it with onions… 😏

Definitely, the best thing to drink or to have as a soup during the summer. My recipe is exactly the same except for the cucumber. I think that gazpacho is for us Andalusians what paella is for Valencians, everyone has their own perfect recipe, and all of them are delicious!

Hi THANK you for this... ok 2 years after this was posted, youre still inspiring others! Really, this saved me, for my sweetheart had some dental surgery and is only allowed to eat cold things. I scrambled for something nutritional to make for her, and here you are! I made this, but combined two other recipes. One was partial to the book from California Culinary Academy that I made years ago, which I cut up a green, red bell peppers, and half red onion, sprinkle of olive oil and salt, and roasted them in a toaster oven at 425 for a bit till charred a little and soft. That adds about 15-20 min. Another thing was to add fresh basil from the garden (which I love) and a few pieces of day old French bread (I'd prefer sourdough but its what I had) as a thickener. I used an immersion blender, those things are fun! The roasting gives it a bit of a deeper flavor, a bit darker color and the specs of basil and roasted bits look great! Some may like, some not. Its a variation. I'm not sure if roasting idea is Spanish or not. I like this both ways. And the bread idea, not sure where that came from, do you know? Its that Spanish also? The bread it thickens it just a bit, so you need to be careful else it will be a paste. perhaps next time Ill leave that out for a creamier texture. Thank you again!

Great video. I lived in Madrid for nearly 6 years. I was taught to add some bread that had been soaked in water to make it creamier and denser. The bread was squeezed out and added into the blender. This recipe is great and very easy as well. In the States, it is hard to find sherry vinegar so I sometimes replace it with tarragon vinegar. Gives it an herby taste. Aproveche!

@@SpainonaFork - I've tried it both ways, and both are delicious! The bread addition makes the soup more substantial, good if you're having your gazpacho as the main dish on a hot summer day. And I appreciate the comment about tarragon vinegar -- going to try it, since I'm having trouble finding sherry vinegar. Delicious, lovely recipe, any way you make it!

Tried this gazpacho recipe for the first time, and then quickly made a second batch 3 days later, followed by another one 1 week later. DELICIOUS, even with the cucumber!!. This is a perfect summer soup. I never thought to puree it in a blender. How easy and quick is that. You can change it up depending on your tastes and what you have available. Que rico, muy deliciosa

Es la segunda vez que estoy sirviendo este gazpacho a mis invitados y ha sido todo un exito. Hemos tenido un calor horrible este principio de verano y esta sopa fria es muy refrescante. The recipe that I have used for 40 years is from James michener's book call Iberia that he wrote of his travels in Spain. I guess the recipe varies from region to region or family to family. His is nearly identical to yours except that I think he puts a small onion in there, but he also reduces two stale rolls to crumbs and stirs them up in the soup. He says American tastes favor 1/4 of a cup of olive oil, but Spanish tastes use a whole cup of olive oil and that's what I have always used. This is one of my favorite summer soups. I'm so glad I found this video. It's fun to watch you make it

Aaah Gazpacho! Going to Spain again in a few weeks, Gazpacho is one of the highlights, with salmorejo, tortilla de patatas, paella mixta (also the original one of course, don't be mad at me Valencianos 😜), jamon serrano, queso manchego curado, gambas al ajillo, pulpo a la gallega, chorizo a la sidra, morcilla, fabada, sepia, mejillones, calamares (no pota! 😠), chipirones, navajas, sardinas, anchoas, boquerones, aceitunas, pan con tomate, queso de cabrales, empanada de atún,....omg....I wanted to lose a bit of weight, but I think I will be eating all day long 😅

It's a lovely recipe, this tasted like the gazpacho I used to have in Andalusia. The only thing I do differently is to add a small chilli pepper, to give it a tiny bit of an afterburn. Thank you for this recipe, it is a lot better than the one I used before.

I always add onion to my gazpacho and instead of green pepper, I use a slightly spicier pepper. I add more tomato, onion and pepper as garnish. Also more olive oil and sherry vinagre.

wonderful. It is not yet time for good, home grown tomatoes where i live, but I do canned them whole in their own juice. One Quart was exactly 2 pounds of tomato so I substituted it and skipped adding in the extra water. This is so good I could swim in it! many thanks for this recipe, it will be one for me to print out and keep in the kitchen notebook.

I am a huge Gazpacho fan, but I guess my way to do it is not very traditional. I got introduced to this dish by a movie from Pedro Almodovar which I really love (Mujeres al borde de un ataque de nervios). I dont use fresh tomatoes (not because I cant get fresh tomatoes, but because it tastes better for me like that), but instead a can of good quality tomatos. Some cucumber, a piece of wholewheat toast bread (not toasted), a clove of garlic, a chili, some balsamic vinegar, some good quality olive oil, salt, black pepper and a few drops of Whorshester and Tabasco Sauce. I mix this up untill everything is silky. The only igredients I add, are croutons. I slice pieces of bread and fried them with olive oil, and flavor them with paprika and chili powder. Combined with the Gazpacho, this is amazing.

Saludos from Andalucía,finally an accurate recipe of gazpacho...that one actually we call It "Malagueño" (from Málaga, Andalucía) and has the cucumber and water so is more to drink un a glass,refreshing.When you Desire to thicken then add bread.Also you have another recipe whithout cucumber that is called "porra" un northern Málaga provincia (Antequera is the town name) or "salmorejo" in the province of Córdoba...no onion,no black pepper,no cumin

I lived in Cordoba, Dos Hermnas, Sevilla, Málaga, Algeciras, Ceuta durning the 90’s. I have attempted to make gazpacho several times since moving back to the states. I love it. I’ve never gotten in 100% right. I always drank mine from a glass. Lol. A lady named MariCarmen made the best I ever had. She’d make a batch for everyone and another batch just for. I always thought she added some lemon juice? I can’t wait to try this simple version. I also thought she added bread crumbs? Can you do that sometimes?

Excellent recipe, well presented and easy to follow! I like your "sopa" version, but I prefer the "bebida" version. You could add on a brief instruction on how to add water to give the bebida consistency without losing the sopa deep flavor!

Jill Branson I have so many ripe tomatoes and can't wait to try this recipe. Can I freeze the soup for future use or does that ruin it? If yes, any special instructions on how to freeze?

I actually have never frozen it, but I am sure you can, just add it into an air-tight container and fully thaw out before serving :) much love

In Malaga, Andalucia you add a little piece of dried bread to sickening. You drink it in a glass because is a drink. I didn't know people out Spain call it soup. Thanks for your appreciation for Spaniards Food.

No soaked bread as a binder ? Minor omission. Aside from that, nice. TIP: I have some homegrown late harvest red jalapenoes that I deseeded and dehydrated last fall along with some halved cherry tomatoes i dried too from the same harvest ... I grind them together 50:50, ala minute, into a red powder and add a little to my gazpacho during blending (works great in hummus too). It not only fortifies the flavor, but helps thicken it.
