Learn how to make Mango Kuchela, a classic Caribbean condiment made with green mangoes, spices and peppers. With simple step by step instructions from Chris De La Rosa of CaribbeanPot.com you'll master this wonderful spiced mango pickle.
You'll Need...
6-8 green mangoes (depending on how large they are)
3/4 tablespoon salt (adjust)
1 teaspoon brown sugar
1 1/2 cups veg oil
6-8 cloves garlic
as much hot peppers as you can handle
2-3 tablespoon cilantro
2 1/2 tablespoon Anchar Massala

I have so many memories as a young girl watching my dad (also from San Fernando) making his trademark kuchela. He passed away when I was 14. Thank you for your videos which keep my Trini side alive.

Hi Chris I have a tip for you I often watch your recipes and I really love making them I made the last one or I would say the first one in this recipe the only difference is I actually added salt let it sit overnight in the fridge and I squeezed the mango got a good amount of juice out of it then I put it in a pot on low heat and got any excess water out of it before I took it out and add my aunt sharp masala and salt to taste then I added some green seasoning which contain hot pepper Shadow Benny and garlic along with my vegetable oil enough oil so that I had coverage when I put it into the bottles I waited overnight for it to cool down properly then I get to the bottles this is my two time I'm making that same recipe and absolutely beautiful thanks so much for sharing with us keep up the good work my name is Jennifer Garrett and I am in Toronto Scarborough to be precise in Canada 🇹🇹 stay safe my friend keep smiling and keep sharing your beautiful recipes with us appreciate it so much thanks again 👍👌♥️❤️🙏🇹🇹

I need to experiment wid de correc oils to use. Is coconut oil a good one to use with your recipe? My cousins used to send me jars from the ‘tourist duty free shelves’. I discovered that it was the sesame oil they used that gave me a reaction. So anything with sesame oil is a no no for me.

Very Nice.. but I make Mango juice with the juice. If you don't want the juice.. Let the liquid sit in the fridge..then you get the starch. which settles at the bottom.. which can be used in cooking..❤😊👍🏽

That's what you're supposed to used but if you can't get Mustard oil, you can use vegetable oil. I've always used Mustard oil.

I have memories of climbing through the bedroom window and spreading a white cloth on the galvanize over the shed and putting cut up green mango and grated to dry .

Chris How are you Bro Love your cooking Very delish Anyway there is a special kind of OIL for that recipe its called MUSTARD OIL. You can only find that in the CARIBBEAN.

i usually use mustard oil but then had a few complaints about the oil, so I try to mix both oils to dilute the taste.

New studies show that mustard oil has no effect on the heart. The president in the US advocates for injections of Gramazone to ease all toxic effects. This is also being used in the US to treat COVID-19 and marisimus. So, Chris is wrong!

You can use the juice from the mango put some salt black pepper and some hot pepper good for a hangover.

Celery has no right being in this recipe in Trinidad we would never put celery or cilantro as some ppl call it in this dish this is a misrepresentation of our tasty kuchela

celery? As far as cilantro, I EXPLAINED - I don't have access to shadon beni (culantro). BTW.. recipes are a base to tailor and experiment to you OWN liking. I NEVER mentioned "traditional" Did I?
