It's probably important to have a good seal between the ceramic bowl and lid. If too much steam condenses inside the dish, the rice coatings can get extremely soggy, and fall off the meat. My aunt's version of this dish always turned out in this soggy sort of way, and the results weren't great. Thanks for sharing this recipe!
Wow, thanks for this recipe! I used to make this all the time from the Taiwanese chef Pei Mei's classic cookbook, using the premade rice powder. Now I know how to do it totally from scratch, can't wait to try it this week.
