Basque Burnt Cheesecake is great for beginners as it is super easy to make. With only 5 main ingredients, you can create this popular dessert, originated from the La Viña bar in San Sebastián, Spain, at home. It is super soft and creamy, unlike other well-known cheesecake. And you can choose to serve it warm or cold.

↓ Very soft and creamy Basque burnt cheesecake recipe ↓
Mold size: 6-inch cake mould
►Ingredients:
Cream Cheese (softened at room-temperature) 450g
Sugar 110g
3 eggs (at room-temperature)
Cake Flour 10g
Whipping Cream 225ml
Lemon juice 2 teaspoons (optional)
巴斯克焦香芝士蛋糕
►材料:
忌廉芝士(室溫) 450克
糖 110克
3 顆蛋 (室溫)
低筋麵粉 10克
淡忌廉 225毫升
檸檬汁 2茶匙(可不加)

Hi! Amazing recipe! Do you know why my cake would burn inconsistently? The middle part of the top gets black and becomes a bubble, while the edges of the top are not really burnt much. I use a normal top and bottom heat oven (no fan but I do have this option) and a 5 inch cake pan. Thank u!!

Do I neeed to preheat my oven. Temperature wise do I follow your temp or I have to try an error with my oven to know the exact temp?

My oven doesn’t have the function to control top and bottom heat separately so I always use both heat.

what kind of whipping cream to use? non dairy or dairy, does is matters. thank you

I used dairy whipping cream. at least 33%.

1.5x the ingredients. So use 4 eggs, 700 grams of cream cheese, etc...

You can multiply all the ingredients by x 1.78. Hope it helps!

I skipped the sieving step before putting into oven becos it was too thick to go through the sieve 😞😥.......why so? Any solution for me pls? 🤔....but turned out taste yummy as well💖.... thanks

It was for me too. So I tapped the seive while pouring the batter and the last bit I used my spatula to press the batter so it goes out of the sieve
