You don't need a guide to go and see the Kumari but it's definitely worth going to (by yourself) and see her. If you're staying for a few days in Kathmandu you might as well go to Durbar Square's office and request for a pass card so that you don't have to pay every time you go there.

Giving/Exchanging Hat is a sign on respect and friendship in Nepali Culture. Head is considered highest respected level of body where soul lives thus covering head is like covering god(Soul is part of god) You can see the hat in all temple top, The sharp pointy thing on top of Temple is the hat for Temple and God inside temple is like soul to our body. You just made a good friend 😊😊
