I had the best Thai chicken and rice dishes in a mall food court in Chiang Mai. I was so broke during that time while living abroad (was in between remote jobs) so my food budget was smaller. But the dish low cost and so filling.

@@JAY1892 nice! I didn't spend too much time in Bangkok, mostly in Chiang Mai for 3 years. It was so chill. I visited Vietnam, Lao, Malaysia, Sri Lanka and S. Korea and lived in India for a while too. I gotta get back out there again. I still need to see Indonesia, Japan and Taiwan.

A technique my mum used to teach me was to soak the poached chicken in a basin of iced water for a few minutes before chopping it up later. I realized that the soaking in iced water led to a gelatinous texture for the chicken skin........

I have wanted to try Hainanese Chicken Rice for ages, but I couldn't find a restaurant in my area to order it. After seeing your video, I decided to stop being lazy and make it myself. I served it to my mom and son. They were taken aback at what looked like boiled chicken and white rice (I stir fried vegetables rather than serve cucumber). Once they tasted it, they couldn't get enough. Your directions were perfect and easy to follow. I couldn't believe how delicious the final result was. And, I put the leftover broth in the freezer to make Congee when my son and I are in the mood for some. Thank you so much for sharing!

I'm pretty sure the all natural chicken stock cubes still have msg. My deal with chicken stock is that most western versions taste more like mire poix soup. My go-to asian stock/msg quick fix is hondashi (bonita/dashi) or Chinese chicken stock powder (lee kum kee)
