My favorite easy keto tortilla recipe: 1 cup of almond flour, 1 tbs xanthan gum, pinch of sea salt, pinch of baking bowder, 5-7 tbs of warm water. Mix togther into a dough and then flatten between two sheets of parchment paper and cook on a hot frying pan. Very appliable, soft and no eggy taste.

If you want to tinker with a ZERO carb tortilla try what I do for my Puercatillas (kinda like low carb maven): I use 1 cup of "pork dust" (pork rinds having gone through a food processor) and 4 whole eggs. Just mix it all together and let it set. This will make about 3 or 4 6" tortillas. Here is the gig. You need a #30 ice cream scoop to measure out the tortillas (or you can divide by hand as the dough is the consistency of Play Doh)... and I use an electric tortilla press/cooker. Dual action here and it make it really easy. Once you have the scoops or pre rolled balls you need to flatten them slightly in your hand before you throw it into the tortilla press/cooker - otherwise it will shoot out the side of the press. Put the tortilla on the cooker plate, close the press and cook for 15 seconds and you are done. On to the next tortilla. Note that when you press down on the tortilla if you press too hard or too long and hear a "pop" - that means the tortilla exploded. Once you get the hang of it you can crank them out. I would guess that if you wanted you could put the scoops/balls between parchment and use a skillet to flatten, or a rolling pin, or maybe roll out a sheet and cutout perfectly round tortillas with a pastry ring or what have you, and then cook on a comal or in a skillet (no oil necessary as the rinds will have plenty)... but i am way too lazy for that. No egg flavor whatsoever. Very pliable. Freeze well. They taste pretty neutral. And I haven't tried it yet, but I have some yeast flakes left over from my keto days which I used to throw in my breads to make them taste more bread like (silly keto needs of mine), so maybe adding a little of that to them will help with the flavor profile. Add a little cream cheese and whipping cream to the mix early on to make a waffle batter... or just some water to loosen up the batter a bit (and give it something to steam out while the waffle is crisping up) Totally carnivore.

I've been lazy, I use 2 ounces of pepper jack and cook them on parchment rounds. When crisped, but still flexible, I put them onto my taco holders to shape them. I've also used the Fat Head Dough recipe with Creme cheese to make them. :)

NOTE: Check the macros on the pcos kitchen ones (The first ones, with the almond flour.)... They are less than 1g net per tortilla. The whole batch only has about 6.5g net and makes 8 tortillas. also.. Dry and grind the Aldi 0 net carb bread... it's great for breading pork chops, shrimp, chicken.... Just season it like you normally would. (A little Lawry's salt, pepper, garlic and onion powder.)

Pulled the quantities from the second one: 1 c.almond flour 1/4 c.coconut flour 2 tsp. xanthan gum 1 tsp.baking powder 1/2 tsp.kosher salt 3 tsp.lime juice 1large egg, lightly beaten 1 tbsp.water Made the second one for carnitas tonight. It was pretty good even though mine weren't as thin as yours. I just used a whisk and spatula to whip it up, needed to add a tiny bit more water. I think it would be great for coconut shrimp - while you can't taste the coconut you can smell it, which is a little weird. Overall I let mine cook a bit too much and they aren't as pliable... I still like them though. I think actually a really big one that you let get a bit crispy would make a pretty good pizza crust...kind of like the old french bread pizzas from middle school.

The first tortilla recipe I tried was the pork rind recipe, and then I was scared to try anything else so we just used cheese crisps forever, but I finally found a good recipe. It's a coconut flour psyllium husk flat bread. And it's the most authentic to the fluffy homemade tortillas my husband grew up on. Real homemade tortillas are thicker not the super thin super market variety

One my go to zero/close to zero tortilla mix is: 1c flax Meal, 1c hot water, 1 tbsp Now Phylum Husk, Garlic 🧄 and Salt. Makes 8. Roll out with the parchment 📜 paper method, my trick is I stray bottom and top with some avocado oil 😊 take top off place on griddle then remove the back one 🙂. Store in fridge. I'd love to see a part 2 of tortilla/flatbreads. I'd like your imput about whether you think each type of tortilla/flatbread would make a good wrap, fried taco, etc. Please review a flaxseed heavy type for a follow up. "Pinche Nancy" has a tortilla recipe that I think you can try out. I made them for the 1st time today. Most of her videos are in spanish but she started making a few English ones, and the recipe is in the description box. I subscribed when I found your carrot cake video. I may make it on the weekend. Serious keto has a great microwave tortilla that he has tried a lot of variations on. I like that it is so simple and easy to make and only takes 90 seconds in a microwave. Good for single servings. He uses a round silicone baking mat in his microwave dish. Makes it so easy.

You're right! The low carb tortillas are expensive! I'm a big fan of the delish recipe. The macros are good and they are very easy to make! Plus they keep in the fridge too. I haven't tried freezing the tortillas yet.

I've said it a million times when I watch these videos I don't know why people waste their time and money on rolling everything out between parchment paper.smh. I use two silicone mats. if they are frosted white/clear in the center you can see through them... so much easier! Less time-consuming and more economical.. I do this with my pizza crust also I peel off the top and I just leave it on the mat and put it on the baking sheet. Again so much easier. I don't know who had the bright idea of using parchment paper from the get-go with almost every single dough recipe on keto... It's just crazy 😜 ain't nobody got time for that! Fills up the landfills also. I do I want to thank you and appreciate you taking the time to do this video though :-) nice to know how things turn out when you pin them up against each other. Try silicone mats it's so much better. I commented before the video was done now I'm watching the wet paper towel. Oh my God people use two silicone mats! :-) you'll thank me later :) Also, here's my favorite tortilla flax seed wraps. Two ingredients zero net carbs. Flaxseed meal (I use Carrington farms flax seed and I grind it down to a meal in my coffee grinder. I get it at Costco 5.99 for a giant bag. 3 carbs 3 fiber equals zero net carbs) boiling water. "Refined nutrition flaxseed wraps" check out the video on KZbin that's where I got it from

I watched a video this morning posted 1 year ago by Joe Duff The Diet Chef of almost the same recipe you made first, he used 1 whole egg and a little hot water. He wrapped his dough in plastic and let it rest awhile so the phylum husk "does it's magic" then made the tortillas. The Best GF and probably not low carb tortillas I like to make take one medium yucca root, peeled, chopped and boiled to fork tender, drain, then mashed. One Green plantain, peeled, chopped and mashed. Mix the prepared yucca and plantain together to make a nice dough. I use a tortilla press with parchment paper to flatten them. Then fry on a hot skillet. I use my flat cast iron. Just cook about a minute or so per side. I personally don't like anything I make that has coconut flour and or a bunch of eggs. Dr. Gundry has a excellent GF bread recipe in his book called The Plant Paradox Family cookbook. I own both of his book. Anyone wanting a delicious GF bread should get his book just for that recipe alone. It does contain yeast so it has that real homemade bread taste and smell and it's also a sturdy bread that will hold up to anything you put on it. I haven't made french toast or bread pudding with it tho.

I recommend using silpats to flatten and roll, will stick less. I used some almond flour to “dust” the surface and it was very grainy like semolina but it worked too! I just used a silicone pastry brush to dust off the almond flour once flattened after it’s cooked

Have you tried the carbalose tortillas from low-carb-scams? I think they're pretty good!
