Agree. Unfortunately, In The Kitchen (ITK) shows on the food network are rapidly becoming a thing of the past. As Bobby Flay takes over the majority of the shows now are reality/competition. It's stupid and I no longer watch, especially after the firing of Valerie Berinelli.

Another delicious, inexpensive and healthy recipe, and also, beautiful to look at! I am sort of "into" the way food looks, and the pinkish-orange color of this dish would be especially beautiful with a dark-green side, like Tuscan kale or collard greens. (Also, strongly-flavored greens and sweet potatoes are a very satisfying flavor contrast.) Thank you, Albert!

I thought the same, what was the point of crisping the sweet potato up if you're going to cook them soft again afterwards? Edit: Not to mention the expense and kcals of 60ml of olive oil he used for frying them.

The frying step seems like a redundant step as the sweet potatoes are simmered afterwards and will become soft. I have a couple of sweet potatoes in the cupboard. Thanks for the inspiration. I will tweak your recipe for my own creation.
