Sam, it looks like you made aglio e olio with buccatini. May I offer a tip? If you just toss the pasta with the oil, you get oiled pasta. If you add some of the pasta water about 2x as much as as the oil you added and do the last minute or two of the pasta's cook time in the pan tossing the pasta with the oil and the pasta water, you end up with a rich creamy emulsion, because the starch that comes off of pasta as it boils is amylopectin, the same starch that comes off of risotto rice as you cook it. This starch makes a rich creamy emulsion that is way better than just oil on pasta. I do something odd to take it to the next level. I have one of those skinny mason jars, and I basically put the oil and garlic into the jar along with a little squirt of anchovy paste, then I ladle in the pasta water, and I toss in one of those coiled whisk balls that are normally used to mix up protein shakes on the go; I then cap the jar and shake the garlic oil and pasta water violently for a minute, and I end up with a super creamy emulsion. Try this variation. You may be surprised at how well it works. Pour this on the pasta to dress the pasta. It works amazingly well, and is tastier than just greasing up the pasta in the pan.

You need a much bigger pot for the pasta with 3 times the water and rock/kosher salt in the water. Looks delicious but you could have used a little more sauce with the pasta! Maybe only a little more Pasta Water.

I just made this about 10 minutes ago and WOW! Thank you so much for sharing this recipe!! It's hands down one of the best things I've ever had! P.S. I think I messed up on the pasta. I boiled it for 8 mins and put it in the pan with the olive oil and that other stuff. It came out a bit rubbery/chewy.

Don’t be afraid of using the pasta water. Easily 1.5 if not 2 times as much as you used. You need enough starch to emulsify the sauce. You went through the work of making it don’t waste it! Another tip I learned from je hi is to cook the pasta in very little water to concentrate the starch. Very useful with oil based sauces

Thank you for your videos I combined your recipes and made the red chimichurri and added mayo to make it a dipping sauce. Then made the chicken from your chicken bacon ranch sandwich. I made chicken and cheese quesadillas with chimichurri dip. The chicken was so moist and juicy.

I absolutely love bucatini! It's one of those perfect pastas when you have a thin sauce because the sauce can get inside the hollow for that extra taste. Damn now I'm hungry LOL! This scallops look incredible. I always want to sneak olives into pasta so maybe some kalamatas? An olive tip for anyone, always save your olive juice. It adds so much flavor to a dish.
