George ad usual a brilliant yet dimple adaptation of something French based, probably provencal style msrrief to jspanese tastes.. I would never have thought of doing this and have always used stsndsrd not japanese eggplants. This recipe is genius. I can think of variations but did you use ham or pork belly,? I always try to perfect the original technique before variations. This is good advice for all home cooks i think.

I think I will use anchovy instead of ham when my eggplants are ready to be picked in the garden.
I made ratatouille for some vegan guests this past January. It was absolutely fantastic and im not a vegan! This dish looks like a nice twist of both especially with that bacon. Good job sir. 👏

I made this from eggplants from my deck garden, and it was so delicious! I did not add the soaking liquid from the chilies, and used less spicy dried Kashmiri red chilies. They added a great fruity flavor but not a lot of heat to the finished dish. I served it with fresh rustic bread, so I guess I failed in making a healthier version of the original dish, but the sauce was too good to not get every bit of it.
