That bite at 7:28 sounded like the waffles were dry and not that moist, you could bump it up to 600kcal by adding butter or butter/low-fat greek yogurt combo, I've tweaked it a little bit with added butter and vanilla extract. Made these already multiple times with regular flour and 3g of baking powder, they raise too little, will try 5g nest time. Also, I used regular eggs instead of only egg white. I used Tefal Optigrill with waffle plates and 3/4 power setting (full power was way too strong). Still, using some sort of oil / spray is pretty crucial here so that you can get them out. I wonder if on lower power it would be slightly better. I also replaced vanilla WPC with regular tasting one, added some ham, mozarela, tomatoes. They make great protein replacement for sandwiches because of it, while still being good for sweet variation. Great recipe to experiment with, I will keep you informed! You have a new subscriber.

I made it yesterday and it was sweet, I'm assuming it's because of my protein powder. I use the Vanilla Gorilla Mind protein powder. I was getting full, was hard to finish. I'm so glad to finally find a good recipe, low calorie, high protein, and it taste so good I didn't need much syrup. I heard it is a whey casein blend but I do not see on the Gorilla Mind website anything about casein, and it's not listed in the ingredients on the bottle, so I didn't chance it, I only use 100 grams of milk.

This might be my favourite healthy recipe of all time! I make this every week and never get sick of it. On days that I eat it, I get way more protein than I need to because it’s got so much in this recipe. Any ideas on how to reduce the protein while keeping the volume/ texture? I subbed out the protein powder for flour and they didn’t come out as crispy and didn’t rise as much. Maybe I should sub just the whey or caseIn rather than all the protein

Go 50:50 and if it seems too dry to your tastes go heavier on the casein or swap 50g egg whites for a whole egg if you have the calories. I was recently gifted a few kg of pure whey and I’ve been mixing it 50:50 with a blend and it’s still good so you’ve got a lot of leeway. Good luck, let us know what your ideal ratio is when you’ve dialled it in!

Okay a lil update here. It doesn't matter how little amount of batter I put in the waffle maker it starts to boil out and the only thing that remains is like a crispy waffle skeleton which is ultra thin but tasty. I think I'll do pancakes

@@justeric69 sounds like you might be using a soy based protein, I’ve had the same problems with soy. Not using baking powder at all will help but really it’s down to your protein powder. Hope that helps!

I tried it out this morning with soy protein. Because it’s so much finer than whey/ casein it sucks up a lot more moisture so the batter turns out a lot thicker, if it’s Soy you’re using be careful how much you stick in your waffle maker because it expands like crazy. It’ll want probably 4 minutes+ to cook, and honestly the texture is nowhere near as good as with whey. It releases from the waffle maker easier though! You might have better luck with pea protein but I don’t have any to try it out. If you do, let me know!

My waffles turned out bad. Not sure what it is. The waffle ripped in half when I opened the waffle iron and it looked like most of the batter had disappeared. All of that was left was like a waffle "shell". That's the best way I can explain how it looked. It almost looked like the blueberry ones you tried to make. Any advice will be appreciated. EDIT: My waffle batter was also pretty tough even though I used the exact amount of milk and egg whites. It had to scoop it out of the bowl when I made it. When I tried to add more milk, the next batch came out even worse.

If you ended up with hollow waffles and the rest squirts out of the iron, that’s usually too much baking powder, so try without adding any extra, there is enough leavening in regular self raising flour for the recipe to work, you just won’t get quite as much volume. Tough like you had to spread and not pour it? Are you using superfine flour or something? What kind of protein? You could try adding 50:50 milk & egg whites to get it to a better consistency. Try these things individually so we can isolate the problem, Good luck!

I’ve never frozen any but I’ve made them ahead of time and kept them in the fridge, they reheat best on the waffle iron and are still pretty damn good, the texture isn’t quite as good as fresh but they’re still tasty! I should think they’d last 3-4 days in the fridge in Tupperware without going weird, and if they freeze okay probably 4 months. If you try, let me know!

What protein are you using? I’ve found that soy turns out a lot thicker because it’s so absorbent. With soy I’ve had luck not worrying about making it runnier, just spreading it over the waffle iron and waiting significantly longer. Best of luck Dude!

You absolutely can do it without baking powder! I found I got nice airy waffles (and as you say - more volume) with a dash of baking powder, I think it helps give a good rise even given the short cooking time. I think it would also depend on the heat of your waffle iron, maybe you have a better one than me!

What protein are you using? I found that if I use soy it takes a lot more liquid to get it to a pourable consistency. But with whey or whey casein blend: 60g protein, 30g self raising flour, 150g egg whites, ~150g milk, and a smidge of baking powder should give you a pourable batter.

Some flours have more raising agent in than others, sounds like you’ve got too much, try it with no baking powder. I don’t even spray my iron, as long as it’s hot before you put the mix in it should be okay if everything else is in balance. Try it with no baking powder and if that doesn’t help reduce your egg slightly. Keep me up informed! 👍🏽

Still struggling, tryed less egg, tryed different proteins (use the same as you now) tryed no baking powder, tryed less milk, tryed more milk. I duno lol. Normal waffles seem to be fine in my iron, but these just will not come out without breaking up.

yogurtey Madness! This will not stand Rob! Are they ripping or crumbling? If they’re ripping, they probably need a longer cook, if they’re crumbling, that’s too much raising agent or too much egg. Try 150g egg white, 150g milk, 60g protein powder, 30g self raising flour, cook for 4 minutes once your iron is good and preheated. If that doesn’t work I’ll just come round and do it for you! 😂

Would using a 50/50 mix of whey and casein have the same result as the total protein blend? Apparently the total protein blend contains egg white powder and other kinds of protein powders, so I'm not sure if the waffle would end up the same. And in my case, the total protein blend would cost $30 more for 5kg. Would love to hear your experience or experiment you've tried! Thank you.

I haven’t actually mad scientist-ed my own blend but I’d start closer to 70/30 Whey/Casein. Whey is cheaper so I think they’d lean into that. They totally work with straight whey, the texture is just better with the blend - you can’t go wrong so you might as well play around with it, great excuse to eat a lot of waffles! Let me know how it goes 👍🏽

Try adding more baking powder. You should get an airier, crispier waffle, but go too far and it will just fall apart when you try to extract the waffle. Experiment!

Made these the other day and they were pretty good. However, mine came out deflated and flat haha. I may have used too much milk though. I used 60 grams of casein protein, 30 grams of the self raising flour, 5 grams of baking powder (tried to get 3 but it ended up being 5), 120 grams of the egg whites, but then i used 200 grams of the milk since casein is very absorbent. Any advice? Should I just use 150 grams of the milk? Thanks man! 👊👊

@@jonathanburris4466 no worries dude! It might also be your waffle iron, if it doesn’t get hot enough it can end up sort of soft and sad, and it it’s not a flippy-jobbie they tend to be soft on top anyway. Best of luck!

Nope. Came up to 423 for me, it’ll depend on your protein powder, milk and maybe your flour but they’re all the same really.
