This is my favourite Marzipan recipe. I hope you enjoy it too.
Ingredients -
Yields: 1/4 kilo or 250g Marzipan
125g Cashew Nuts
200g Sugar
1 egg white
1/2 tsp Almond essence
1/4 cup water
Food colours, as required

I've been wanting to make marzipan for quite sometime and was skeptical about finding the right recepie for it. Thanks to your channel. I followed your instuctions to the T and got the perfect and delicious tasting marzipan. Loved your crisp and clear speech too. For the others out here, this definitely is a fool proof recepie.

Just liked the way u explained every bit of the process...wud love to give ur recepie a try...wanna know..how will Goa cashew work out...coz usually wen I prepare marzipan they release oil....and how long can I store it in airtight container at room temperature ?

Hi Janice, I've used Goa cashews in the past without any trouble. If its just a little bit of oil it will dry out as you leave them aside to set. If its not too hot and humid, it should last for about 8-10 days.

I tried this recipe, it all went well until it was time to stop cooking. I tried the water test 4 times before turning off the flame, it was still sticky but the mixture in my pan looked thick compared to your video. I cooked it a total of 30 mins as i used a non stick pan. Even then after it cooled down it was so sticky that i couldn't even shape it, it kept sticking to my fingers 🥲🥲🥲🥲 So i just made balls out of it. Taste is good but the appearance is bad 😂 Will try again with just 50 gms And see how it turns out

I got a bit of lumps initially which turned into caramel nuggets later. thouh it tasted great im sure it is not traditional. Please advise. Also how do you store them? and whats the shelf life?

I just use regular granulated sugar. It just melts in the pan on the heat.

Thank you for your recipe. I've followed it and they taste amazing. The only concern I have is that the mazipan is not hardening. I've kept it out to dry and it's still soft. Please help me as to what I can do. I don't want so much to go waste

The moisture/humidity in the air also plays a role. Sometimes, I just loosely cover the plates with sheets of baking paper and leave it to air dry overnight. Usually the next day, its perfect to store. You can use newspaper too, but just make sure the paper does not make contact with the marzipan.

Hi Trisha, hope your doing well :) such a well detailed video. I’m gonna make milk cream n marzipan following ur video this Christmas. But I’m wondering if I use 150gms sugar instead of 200gms in both recipes, would it do harm to the end result?? 🤔

Hi Roma. How are you? I have dropped the sugar a fair bit in the recipe. I'm not sure how it will turn out with a little less. Maybe try a small batch and see how it goes.

Lorna, you can do it either way. If you double the batch it will take longer to cook off. If this is your first time making marzipan, I would recommend making a single batch first, just so you know what to expect. I have made double batches and even triple batches in the past, but it does take significantly longer to cook off. Ultimately, its more a personal preference. It will work well either way.

Hi Thank you ever so much. Broughr back memories of my nana and grandpa. Both were great bakers. Nana was an irish chef. They had a bakery.I was only 3yrs old. It lasts for 8-10 days at room temperature - depending on the weather. You can make it a few days before, but I wouldnt recommend 1 week before.

Hazel, that means it has cooked for too long. For future reference, you need to take it off the heat a lot sooner than that.

Hi Arlene, in a dry air-tight container, it should keep for 8-10 days at room temperature, if its not too hot and humid. Store it in a cool, dry place. In the fridge, it will keep much longer, but it may sweat when taken out of the fridge. Hope this helps.

Hi, I made it but it turned out a bit soft but it was fitting into the mould. Also I thought I'll keep it in the fridge to make it a bit hard but then the taste changed. Could you please guide and help me out?

Thanks so sharing this. I prepared this yesteruds. I think I kept it on fire for bit long. After cooling I had lot many pieces of hard stone. I then put all it in the mixer after making smaller pieces with hand and ground it fine and then kneed with water. Thank God It dint go to waste. Also it's very very sweet even though I put only 175 gms of sugar. Next time will try with 125/ 150 gms . :) Merry Christmas to you n fly!

Hi Richa, it depends on the weather. If its not too hot, it should last for a week to 10 days. You can store it in the fridge to increase shelf life, but it could sweat a little when you take it out of the fridge.

@@TheAspiringHomeCook i have rubber moulds of my mum and she has kept one over the other after using them. So they are stuck to another. How to prevent these MOULDS FROM STICKING ANOTHER DO WE POWDER THEM .AND WHICH POWDER

I've never come across this issue, but depending on how old the moulds are, and the heat levels during the year, it may have left the rubber compromised and it may not be safe to use, especially on food. I would recommend getting new moulds. If you're worried about sticking, maybe wrap them in some muslin cloth and store them in a cool place.

Thank you for the detailed and excellent explanation of the most desirable of sweets on the kuswar platter. Could we use roasted cashew nuts for this receipe? I have got a box of v good quality cashews - only thing is, they are roasted and not raw.

Hi Vanessa, I'm not sure if roasted cashew nuts would work. The oil content, the colour etc. will be different. If you want to try it out, try a very small batch and see how it goes.

I kept the casew for more than 2hrs soaking... and my texture was very sticky... dont know how i can make it hard cause its very sticky... Also i kept Stering for more than 40 minutes still its sticky 🤭 Is there any other way to make it hard?

You don't need to soak for so long. Also you can add some icing sugar a little at a time and knead it in to make it harder.

Hi😀 Great marzipan recipe. I still have got to Prepare them. Wanting to know are they.roasted cashew nuts or raw cashew nuts as packets available in supermarkets. Thanking for sharing. Have a great Christmas 2022 with yr family and friends.

Could we avoid the egg white and also how long will it remain at the room temperature.

I've never tried it without the egg white, but, it should be okay. If you do try it without the egg, I'd love to know how it turns out. It has lasted a couple of weeks for me before it got over, but it also depends on a bunch of factors - how hot the temperature is, the humidity in the air, how moist it is when taken off the heat etc. Hope that helps.

Yes replace egg white with one tablespoon corn syrup. Add at the end before removing from the flame.
