Ingredients: 2/3 cup (145g) almond flour 2 cloves garlic 2.5 tbsp (40ml) lemon juice 1/2 cup (120ml) water 3 tbsp sunflower oil (or other neutral oil) 1.25 tsp salt Resources: blender cheese cloth parchment paper Preparation: 1 - Preheat oven to 140 degrees 2 - Combine all ingredients in a blender. 3 - Start blender on a slow speed until mixture has formed a cheese like texture. 4 - Remove mixture from blender and place in a cheese cloth. 5 - Squeeze excess moisture from mixture in cheese cloth until dry (about 2 minutes). 6 - Line a 2 pound loaf pan with parchment paper. 7 - Spread mixture evenly into parchment lined pan. 8 - Place pan in preheated oven and cook for 30 minutes. 9 - Remove from oven and let cool for about 15 minutes.

Yes but when you make almond milk you milk the fat out of the nuts so what is left is the fiber of the nuts. To make cheese you kind of need that fat. You can use the almond pulp in veggie patties or dry it and use as gluten free flour. It was a nice idea though, maybe it works. If any one tries, leave a comment 💕😊

I did try it, several times, and it works very well. With usual tools you have at home there is enough fat left in the pulp. Also in this recipy sunflower oil is added. I used about the same amount of olive oil (plus thyme) and it worked nicely. I used Sophia Hoffmann's recipe and also tasted it, made by herself, in one of her "Vegan Queens Dinners", made from the almond pulp of the milk she used in the same dinner. It really works great. :)

Tried this yesterday. It is FETASTIC! Due to mal-sampling of the blender a little water ran out, but I decided not to replace it, and instead left out the part where you drain it, since I was afraid that too much would stick to the cloth. Also spread it out in a thinner layer so it could still dry up. It just turned out SO well, and since feta is one of the things I miss the most I am THRILLED! Thanks you guys, you just make the BEST vegan recipes 💚👏😍

I've made this and it tasted great. Actually, being Greek, it tasted more like tahini to me but still super tasty. I used it in my spinach pie and it added a really unique taste to it. Btw, the J-cloth straining didn't work as the paper was ruptured from too much humidity and had to leave it in the oven for nearly 45 min for it to dry. I also used whole almonds and they worked just as fine. P.S. You can also sprinkle some oregano on it after it's cooked.

Is it ok to use what you’ve squeezed out from the cheese cloth as a cheese sauce and how long does it last in the fridge? I made this feta & it’s incredible. I use these two for everything! I lived in Cork for one year and Dublin for another but now I am back in Canada. I love, love, love them!

White Lotus Tarot take any vegan plain non-sweetend yogurt, dump into a double lined cheese cloth and squize out excess water. Bound cloth tightly and hang above a bowl in the refrigerator for 24 hours to drain. Remove from cloth and fold in salt to taste.

The Happy Pear - Vegan Feta Cheese Preheat oven to 140 degrees 145g ground almond 2 cloves garlic 40ml lemon juice 120ml water 3tbsp sunflower or neutral tasting oil 1 and 1/4 tsp salt Put all in a blender. Start blending slowly. Blend about 2 mins on slow speed. Cover a bowl with cheese cloth. Add the stuff. Squeeze out any excess water. Line a small loaf tin with grease-proof paper. Spread out to about 3cm high Bake for 30mins. Leave to cool 30 mins.

That's a very interesting try at a vegan type cheese...but i'm not sure if u could at all call it feta...I was grown up consuming so much of this cheese (in its many local slight variations), and I can assure you that its strong specail taste has nothing to do with garlic! Now that dairy products are in exile from my daily diet (after medical urge) and I've been missing feta a lot for more than an entire year, your suggestion sounds fabulous to me just to jazz things up a bit with my feta-orphan summer Greek salad! I just made that version of vegan "Feta", I love greek Feta cheese, but I want to eat vegan again. I do have to say that it (of course) is not like the real thing, but it tastes pretty much like some sort of it (and I did not expect that), also the consistency is not as "smooth" as real Feta (but that might be because my ground almonds are crumbly). Nevertheless I find this is a quick and easy option for a vegan "Feta" and I can't wait to put it on Pizza and in salad

Hey Laura! We basically just eat all the time!! We're constantly surrounded by food as it's a huge part of our life, so we're snacking all the time!! Nuts, whole grains, fruits- constant eating!!! 😄😋🙌 We work out about 5 times a week also! 😄

I've used it on pasta, greek salad, on pizza and it first really everywhere. Very good recipe, but I don't really see any point on squizing the moisture out of the cheese, it will be gone in the oven anyway, tried it 2 times. Greetings.

There is no such thing as vegan feta cheese. You need goats to make feta cheese. This is ridiculous.
