Healthy & delicious! Peeling is much easier after roasting. I usually wash, slice in half lengthwise, s & p, oil, cut side down on a baking sheet till roasted. Very easy to remove skin, some will just slip off. Cooking with skins on also makes them more flavorful.

Quick tip : use your measuring spoon to scrape the seeds out. .Edges of spoon are much thinner/sharper.

I love doing rice in my instapot! I do 1 cup rice 1 and 1/4 water. Usually 22 minutes for brown rice and 25 minutes for red rice and I put a splash of olive oil in it and it always comes out perfectly :)

Looks good and good for you. Olive is so well-behaved. You've mentioned you are not fond of the red cabinets, but they _are_ such a perfect red...at least on camera. I think having the range ventilation hood painted black would make it even more special. Could have that enameled sprayed at car paint shop. May God bless and keep your family well. 💛

Thank you for this video. Austin is so cute, rubbing the beets on his teeth. He did a really good plate "reveal", and I love his "Olive" voice. I really love that you (and of course your mom) cook with whole foods. I roast my veggies the same way, and I cook my rice with veggie broth. Before I went vegan, I baked my chicken with the same seasonings. Now I cook my tofu that way. I can't wait for your maple butter cake video. I love maple flavored anything, and cakes are so easy to veganize. It was so sweet to see the two of you having your Sunday Dinner. And to see Olive under the table. And your cabinets are a beautiful color, so is your top. Great choice!

Good looking supper there. The butternut squash I grew this year didn’t get half that size. With Landree leaving for college Tuesday and Colton in the army I have to learn to start cooking for 2 people again. I haven’t had to do that in almost 24 years, it’s harder to do than people think. I’ll have to start keeping notes on your 2 person recipes, they always look so good. God bless.

Tucker (food) is looking good. Never had roasted beets before, down under, there are generally pickled sliced and canned, and used as part of a salad, or on a burger. That G/F dessert looked good. :) God Bless you all.

I like to drain my greenbeans, and put them in a cast iron skillet, with butter, and let them cook till they are wrinkley. So good.

I'm in my 60s, and I've never had butternut squash. And I've never had roasted beets. I thought I didn't like beets, but I'm going to try this. I will also be pressure cooking rice in the Instant Pot. Grumpy Old Man is going to be happy.
