This rice is my new favorite | Chipotle Pepper Rice

Today will show you another delicious and easy rice recipe for dinner. I will be making chipotle rice. This is similar to the way I make Mexican red rice. The smoky spice for the chipotle in adobo sauce and the butter make this the perfect dinner side. This is gonna be good!

INGREDIENTS
1 1/2 Tbsp cooking oil
1 cup of long-grain rice
small piece of onion
1 to 2 cloves of garlic
2 Tbsp unsalted butter
1 to 2 Tbsp diced chipotle peppers in adobo sauce
2 cups of water
1 Tbsp granulated chicken bouillon powder

I can’t wait to make this!!! I love chipotle!! I make Beef Chipotle Tostadas and they are so good! I cook 2lbs ground beef with lawrys garlic salt and some black pepper. Once almost browned I add diced onion and cook for about 5 minutes and drain any oil. then I add all the chipotle sauce from 2 cans of chipotle and I dice finely about 3-4 of the chipotle chiles cook and simmer about 5 minutes. I spread sour cream on a tostada shell then add the meat, minced onions, cilantro, shredded lettuce and diced tomatoes. No need for salsa!!

I need to keep my eye out for that jar. That’s so convenient! I often forget about the can after I use a couple of peppers, that seems like the perfect way to always have it on hand

Just buy the can with the whole peppers and pour the contents into a food processor. Pulse a couple of times and then store in a little, dedicated tupperware (or glass container).
