I cooked cherry tomatoes, onions, garlic, fresh basil, and kalamata olives in a casserole dish with olive oil, let it cool a bit, and put it on my focaccia. It was good.

Try apple and cheese or white chocolate and almonds. Honestly there is no limit but my current favourite is sautéed leeks and garlic.

I saw a tip today. The baker wet the parchment paper under the tap and then crumpled it up (like Jack did), This made it easier to form into the pan as the paper was now almost like fabric. Cheers!

I love onions and garlic together with some rosemary. Then I like to sprinkle freshly grated Parmesan cheese on top as soon as it comes out of the oven. So yummy. It's good with tomato based dinners.

Apricots and walnuts with rosemary...I reckon there will be upteen variations. Made small ones with spare ones frozen. Out and refreshed in the freezer, no soup will be eaten without your delicious Focaccia. Thanks again for this magic recipe in the your book.

Hint: If you dampen the parchment, it will mold to any shape you want without fighting you. I tear off a piece, run it under the faucet, crumple it, then dry it off with paper towels. It then easily assumes any shape you need it to. Gorgeous recipe, Jack! I bought the Kindle version of your book just for this. Can't wait to try it later on today. Cheers!

Jack thanks so much! I’ve loved making focaccia since at least 1993, lol. There I go - before you were even thought of! Your focaccia variations are so great. I any wait to do the blackberry one as blackberries are in season here! I have done it with grapes quite naturally when working in vineyard kitchen. My favorite is also with the onions. I tried sweet Gorgonzola with that and delicious. Always up for another take on focaccia. Thanks again always for your efforts.

Thank you Jack. I love making Focaccia and I use a no knead dough. It’s the no knead olive oil dough from Artisan Bread in 5. If I keep it simple it works, but I’ve used sun dried tomatoes or olives and they burn. This is even with olive oil drizzled on top. Nice muscle shirt………:) !!!

Potato on top? Try adding it to the dough. It makes the inside super soft and gives a really great fine crust. And look at the way this guy drowns the bread in oil and water. It does the same job as the tray of water underneath, but the emulsion makes the most delicious texture in the dimples. I like it with onions as described in the video.
