Nice to see the chef clean his kitchen before starting their work!
I really like his cooking style that is concise and full of energy. You can really feel his dedication and craft into the art of cooking. Most importantly though, his addiction to keeping the kitchen clean is what makes him my favorite Japanese chef so far :)
His kitchen is really very clean, and his food looks yummy 🤤

yup, I loved how he tasted his fried rice (16:06) even though he already made it so many times. Not letting his own quality to fall is praise worth to me. Awesome kitchen, awesome skills and beautiful food appearance. Thumbs Up~

This chef is amazing. The skill combined with cleanliness is hard to find. I can see why people seem to love his restaurant.
As a chef the one thing I noticed is that he tasted every dish for seasoning then adjusted, if it was required. Small things like this demonstration a chef who is driven to perfection .

Obviously you haven't traveled much. As an Asian, have worked for Western chefs.
