Hope it helps well! 【Keema Curry】 Ingredients (4 servings) : 300 g minced beef (3 beef, 7 pork) 1/2 onion 4 shiitake mushrooms 80 g celery 1/2 handful parsley 4 eggs Rice as needed 2 tbsp salad oil a pinch of salt a pinch of pepper A* (3 tbsp curry powder, 1 tsp cumin, 1.5 tsp cardamom, 2 pinches of hot chilli *less if you don't like it spicy) B* (100 cc water, 200 cc tomato juice *with or without salt, 3 tbsp plain yoghurt (unsweetened), 1 tbsp soy sauce, 1 tbsp mirin, 1 tsp grated ginger, 1 tsp grated garlic, 1 tsp sugar) Methods : ① Finely chop onions, shiitake mushrooms and celery 1:50~ ② Remove the parsley stem and finely chop it. 4:10~ ③ Put 2 tbsp salad oil in a pan. 5:20~ Add 2 pinches of salt to ①. Fry over medium heat until soft and golden brown. Remove from the pan. ④ Add the minced meat to the frying pan and fry over medium heat. 6:58~ Season with salt and pepper (a pinch) over medium heat. Fry until the water around the meat becomes transparent. ⑤ Add ③ back in and stir-fry until combined. 8:40~ Add A* and fry until fragrant. ⑥ Add B* and parsley (reserve a little for garnish). 9:55~ Cook over low heat for 10 minutes, stirring occasionally. ⑦ Bring the eggs to room temperature. 11:40~ Put gently into boiling water with a net scoop. Boil for 6 minutes and 30 seconds to half-boiled eggs. ※ Boil the eggs while stirring them for the first minute or so. Drop into iced water and peel seconds off the shells. ⑧ Taste ⑥ and season with salt and sugar if needed. 15:00~ Place rice in a bowl and pour over the keema curry. Sprinkle with the remaining parsley and top with the boiled egg.
