My grandma has always made an ogratin with broccoli, cauliflower, and carrots mixed in with a ton of cheese and cream, topped with a good layer of breadcrumbs. I've been wanting a vegan version forever! I can't wait tot make this!

Thanks Lauren for this recipe! In Belgium we do a lot of gratins usually with endive, ham and cheese. I don't like endives so my mom used to do it with leeks for me. Since I'm vegetarian I don't do it because I don't eat ham but using smoked vegan cheese seems like a great idea to add this "ham" flavour 👌 YUM! 😋

Just so you know Violife cheese, vegusto (no moo) and cheezly are available in france as of 2013/2015 (depending on the brand) at selected stockists. I couldn't find specific stores because for some reason it wouldn't let me search that from Ireland. You can also order them online for delivery to France at very reasonable prices and the vegan sites that do it also do vegan butter too. Google "vegan cheese France" and at least 4 online stores that deliver to mainland Europe pop up straight away (English language search anyway) I hope you find some, Violife smoked cheddar is gorgeous ans would really suit this recipe

I think you could totally skip the cheese in this recipe and maybe add a little extra salt! Breadcrumbs are great for a topping on their own!
