I have a question!...If i am making the garlic mayonnaise, when i'm done frying the garlic and herbs in olive oil and i have sieved the olive-oil/garlic mixture...how long should i wait for the oil to cool before i add it to the yolks in the blender. I'm afraid of adding the oil when it's too hot because that might scramble the eggs!!

My 1st job at age 15 was as a kitchen apprentice in a French restaurant. One of my duties was to make the "snail butter" - the butter used to pack the escargot into the shell for broiling. This butter was a combination of whole butter, a couple of onions, a handful of garlic, some chopped parsley and a few other spices, all pushed through a meat grinder. When it was time for kitchen staff to eat, I would use this butter to put on my bread. I'm drooling just thinking about how Chef Paul's bread tasted with that butter.

@ 3DPDK 😂 and watching the "escargot" crawl out of the pot of boiling water and the garbage can. Yes, I witnessed those events before and after eating snails. Snails are an experience - watching Asian people eating baby snails with chop sticks?

@@LIZZIE-lizzie Snails, at least in the US, come frozen packed and already removed from their shells. Shells are bought separately and reused after boiling them after each use. I tried them once. They smell good under the broiler; they look good drenched in butter, but they have the texture of an old tire inner-tube and taste about what you'd expect 50 year old rubber would taste like ... but the "snail butter" was delicious!

For that third trick just let the butter cool (thicken) for a bit before stirring in the herbs so they don’t sink to the bottom of the container and have a more taste consistent (and visually appealing) spread while being used.

Toum (the first sauce) is quite possibly the best thing I’ve ever put in my body. The flavor is phenomenal on almost everything. I have five jars of it in my fridge right now and I go through probably one a week. I buy my from my local Lebanese grocer though for dirt cheap instead of making it usually.

Great ideas! I freeze mine in ice cube trays remove and save in one or two serving boxes in the freezer and just grab what I need. Best to label and write what’s in the boxes. Makes bbq time so easy literally bbq the food and put whatever flavour I prefer. I bbq squash, corn on the cob, tomatoes, onions, peppers and egg plant…. Thank you!

I made this after talking to a young man on a flight across Canada a few years ago. His family was from Portugal where Toum is popular. So, I tried it. OMG…..well worth the effort to peel garlic!

Nicely done Chef. I suggest you try using a lime over a lemon - it is much better! I make garlic-lime-mayo all the time for wraps and sandwiches. Anyone making this at home remember... raw garlic and any oil including butter, must be kept in the fridge. ps: add a few chilies to the oil to spice it up :)

@@akuamosipottinger2125 It doesn't last a week at my house as it always gets consumed. We often make a homemade version of Popeye's chicken sandwich... marinaded in pickle juice for a day, double coated in a flour/b-pwder/corn starch + seasonings and use it with that. Mayo is shelf stable and the lime juice is acidic. The real danger is making garlic-oil and not keeping it in the fridge. It should last a long time but just make a quantity you will use in a week and always keep it in the fridge when not in use.

My mother in law just turned 100 yrs old and is a magnificent cook because I just love garlic she told me that if I peel it and pop my cloves in a jar covered with olive oil they will last & still be fresh and fine for up to a year. I have been doing this for a very long time now & I always have garlic olive oil too because of this method of storing my fresh garlic 🧄. I will definitely be making all these I can’t get enough of garlic 🧄! Thank you 😊

What a great idea for peeling garlic! Beats the heck out of the old hammer-whack method. Also ~ instead of toaster oven ~ bread prepped in a pan, smeared all over with garlic spread?? Well ~ rather than dried out ~ that equals succulent!! It's official. My grocery purchases have seen the last of minced garlic in a jar. I can't wait to do all these myself, so it's awesome ~ and, fortunate for the two of us(!!) ~ that my husband and I are both garlic lovers!!
