Even when I am not completely sick of preserving tomatoes in the throws of the season, I bring my tomatoes in, wash them, core them with a strawberry/tomato coring tool and toss them into bags to put in my freezer. Even if I am planning on processing them the next day. I do it this way as a time saver. I take the bags of completely frozen tomatoes out, put them in my sink and run pretty hot water over them and they slip the skins so so easily. Then just toss them into my huge roaster to start the processing. The other thing that I do while they soften and start to cook is to use a ladle or measuring cup and with as minimal disruption to the fruit as possible, pull out as much water as I can. This cuts down on the cooking time SIGNIFICANTLY if you are trying to get to a nice, thick sauce. I also take those skins that I slipped off in the hot water, safe them and freeze dry them to make tomato powder to use as a thickener/paste. I really enjoy your videos. You are doing a GREAT job. ☺🍅🐷

As a long time soap maker, I would suggest using your lard for balms using herbs and beeswax of your choice. Super amazing for your skin. The best fat for making a beautiful hard white base and super nourishing skin loving soap is from the kidney fat from beef. So lard from a pig yields soft end product And tallow yields hard finished product Hope this helps. It’s not as hard or scary as you think. No more complicated then pressure canning!

I do like to see people trying something new for the first time (soap making for example) so that I know what issues I may run into. Most who know exactly what they are doing tend to skip over some things that may make a difference to us because they have already made mistakes and know what not to do or expect.

⭐ I gave myself a star.😂.I totally kept track and you have that planned out perfectly. Less dishes, keeping everything hot. And moving right along. Plus I'm sure you had to stop to take care of the kids needs in between. Snacks, lunches, fights, potty trips..lol. great job!

I have been gluten free on doctor's orders for 16 years. Not always easy, but very doable for me. But carnivore, I sure hope I never need to go that route. Glad you are getting positive results.

My husband absolutely loves the carnivore lifestyle he thrives (he didn’t do it for health reasons but it still had great results). Plus it’s yummy. Great video! I wish I knew someone who knew how to can i would throw a canning party so they could show me the ropes! (Yes I know I can learn via KZbin but it would be fun in person).

I'm so glad you can "by the book". Potatoes are not something to mess around with when canning. You got so much canning done! I have been taking a break from canning - nice to have my canning pot away and not think about canning for a while here. But I will say I recently froze about 5 quarts of chicken broth and now I am trying to use it up now because I don't have room in my freezer for anything else.

Great video! I never seem to have time to take out the Cores, because the whole reason I’m freezing them is because I’m too busy doing all of the other things! I like you said it is what it is and once there are thought the coring is not at all

I have the same pressure canner as you. I noticed you water bathed in it. Can you tell me how you do that please , like the amount of water and especially how to treat the use the lid for water bathing. Your canning is very impressive! This was perfect timing for me! I placed my first order for 1/4 cow & 1/4 pig and I now have to clear out a freezer by mid March. I'm kinda stressing over it now.. LOL I also have 50 pounds of potatoes to preserve that I bought from Azure last month and I have never canned anything before! Thank you for the inspiration!

When you make broth, do you ever get the jar orchestra when you take them out of the canner (when the lids go up down up down up down lol)? I'm really glad you made this video because I have BAGS of chicken scraps for broth I need to get to, and 44 lbs of tomatoes in the freezer too lol.

I did my tomatoes from the freezer this week, too--juice and pizza sauce. I have some potatoes to get done, so I don't lose them--a pork butt to get canned that I found on sale and tomato powder to get finished. It's a lot of work, but it sure makes you feel good when it is done.

When you can potatoes, do you bring them up to a boil in the pot and then boil 2 minutes, or bring the water up to a boil, add the potatoes to the pot of already boiling water, and boil for 2 minutes? I canned some potatoes over the summer (first time doing it), and put them in the pot of cold water and brought up to a boil, and they were very soft when I was putting them into jars. After processing they were too soft to even hold their shape. I'm wondering if I should have added them to already boiling water instead of bringing them up to a boil in the water.

What an amazing accomplishment. Totally in awe of you. Great way to make room in your freezer and not waste food. I don’t grow potatoes due to space constraints, but I could purchase them at a reasonable price from some farms around me. Could you tell me approximately how many pounds of potatoes did it take to fill 6 quarts??

Good for you, Kelsey! What a lot you got done. I pulled a ham out of the freezer that needed to be used since my son is here visiting from Boston and he likes ham sandwiches. Yesterday I had taken all the meat off of the bone and it cooked all night to make ham broth. This ham came from Butcher Box so I felt good about making bone broth from it. I just strained it and then I sat down and noticed you had posted a video. Thought it was funny we were both dealing with pig. Enjoy all your goodies. Does broth fit into your carnivore diet? I tried the carnivore diet. It did not work for me. The diet actually increased my inflammation. I felt great for a few weeks, then I got sick. Turns out I have some major gut problems that I have to address before I can return to the carnivore. I went to a functional medicine dr and had tests done. I have a leaky gut and the meat poisoned my blood stream.

Wait you have coal heat?! Is that common where you are still?? Is that an efficient way to for your guys to heat?

We are in coal country, it’s a huge thing where we live in PA, a lot of the men in our area work the mines. It’s very affordable, although very dirty. It’s heats HOT and DRY. Definitely a more affordable option here and does the job well ☺️

As of last year, "by the book" actually includes skin on potatoes and dry canned potatoes. They have been tested and it's as safe as peeled and/or liquid!

Have you ever canned diced potatoes? I would have far more uses for small diced, but I worry they will turn to mush.

The smallest I’ve seen Recipes recommend is 1/2 inch cubes, any smaller and I believe you’re right, they’d turn to mush.

You can use both I believe! Some people like working with one over the other ☺️

In a previous preserving video, you used a commercial grade hot plate for one of your canners. My question is, how did it work? I am looking for a hot plate that I can use when canning.

It worked, but it took a LONG time to get the canner up to temp. I'll continue to use it but just plan for extra time needed to get it hot. End product was still a success.

White potatoes can best, make sure not to blanch too long, rinse at least twice before filling jars. We really enjoy them, they aren’t mushy, but are soft. Anything canned won’t be identical to things cooked from fresh, so just keep that in mind.

She uses it interchangeably with chicken broth so anything that requires chicken broth.

Re: carnivore diet, do you worry about the environmental impact? Do you do something to combat that?

While I understand your discomfort about raw packing potatoes (dry canning is canning in the oven) using Ball recipes means you aren't going by the book. The USDA has stated they don't recommend Ball as a reliable canning resource because they haven't provided their testing methods. The USDA is the same organization that had a recipe for canning plain summer squash for years and only recently removed the recipe because of missing documentation of the test and inability to reproduce the tests. So they provided a recipe for years that apparently wasn't safe 🤷🏽‍♀️. The USDA is a good guideline but there's a reason rebel canners are out there and most of their methods do work, otherwise we'd have news covering the mass of people getting botulism from their canned goods.

I’ve done thorough research, as I tell everyone else to do for themselves. Nchfp, Ball and Bernardin are all safe sources I trust and feel comfortable with as do the safe canning groups I’m apart of. To each their own! I always say “your kitchen, your rules” . ☺️

Please do not put down commercial pork producers. We take great care of our animals just like you do with your chickens. We just do it on a bigger scale.

I feel the same way about making pork, beef and chicken broth! When I see people using rotisserie chicken from Costco etc... it makes me cringe. They're pulling all the yuck (antibiotics, pesticides and chemicals from feed), from the carcasses and concentrating it down. 🤢
