What’s For Dinner - Easy Budget Friendly Weeknight Meals - Ritz Cheddar Chicken - Enchilada Casserole - Marshmallow Brownies

Steak Tips
Mix 1 Package Pioneer Brown Gravy Mix (Makes two cups) with two cups water and 1 can cream of mushroom soup, pour in crockpot. Brown stew meat in oil on stove, season with salt and pepper. When browned to your liking stir meat and drippings into the gravy mixture in the crockpot. Cook on low 4-5 hours. To thicken gravy make a slurry from a couple tbsps flour and water and mix into gravy, turn up to high approx 30 minutes.
Mashed Potatoes
4-6 medium potatoes (peeled, washed and diced)
Cover with water and cook until fork tender
Drain, mash a little
Add 4 oz cream cheese, half stick of butter, salt & pepper
Mash a little more
Stir in milk, season to taste
Ritz Crispy Cheddar Chicken:

Enchilada Casserole
Brown 1lb ground beef and chopped onion. Drain. Stir in 2 cups salsa, 1 can black beans rinsed and drained, ¼ Italian salad dressing, and 2 tbsp taco seasoning stirring until blended. Place 3 8 inch tortillas in a 2 quart baking dish sprayed with cooking spray. Layer ½ meat mixture, sour cream and shredded Mexican cheese. Repeat layers. Bake covered at 400 degrees for 25 minutes. Uncover and cook additional 5 minutes. Let stand 5 minutes before serving.

I would be interested in what your favorite church meal is, really for a funeral. I’ve never seen a ground beef recipe with Italian dressing. Pleasantly surprised. I live in a small town in OH and we have the same kind of small town with the local paper having recipes of the week or I can write a letter to my editor about something nice that a local merchant had done. My local pharmacy really stepped up to help us with info or resources when my husband was diagnosed with cancer a few years ago. So I wrote a letter to the editor and they printed it. It was so refreshing because when all u hear when u turn the tv on to watch the news is mean political crap. Thank u.

We live in a small town in California in a very rural town of 25,000. We have a small town newspaper that comes one day a week. Our town is pretty small but we like it we are now retired and we have been going to the same church since our daughter was 1. She will be 50 next month. We were shocked that they were losing all our members due to age ad health concerns. So it closed. I learned a new way to get that white tendon out of the chicken. I grip it with my kitchen needle nose pliers. Then put the tines of the fork around it between the pliers and the chicken and just pull. It works really well and only takes seconds.

My mom had a great way of chopping onions She peeled it and cut off one end. Then holding it with the flat dice facing uo..she cut slips down one way then the other .laid it on the side and sliced Worked like a charm
