Thank you sir for the inspiration and to your cinematographer for his amazing camera work and close ups! As someone who loves cheese but has no interest in "grilled cheese" or "mac & cheese" I think J. Kenji Lopez-Alt won based on being the most traditional? He might also win for 'ham & cheese' sandwich as well. Your Frankencheese (minus the avacado) was my personal favourite. I love this feature of taking the best of KZbin and creating the Ultimate. (Shout out to Tyler Florence's Food Network show) Appreciate all of the time and thought put into your channel.

It’s pronounced “rare bit”: Welsh Rarebit 350g Mature Cheddar, grated 1 large egg, lightly beaten 2 tbsp beer (preferably stout) or milk 1 tsp Worcestershire sauce 1 tsp English mustard pinch cayenne pepper 2 thick slices white bread, preferably from a bloomer loaf Set aside 1 heaped tablespoon of grated cheese. Mix the rest with the egg, beer (preferably stout) or milk, Worcestershire sauce, mustard and cayenne. Preheat the grill to high and toast the bread on both sides. Spread the cheese mixture on top and then sprinkle on the reserved cheese. Grill until the cheese is melted and starting to turn golden brown. Serve immediately. Delicious!

Okay-Try this one. My parents are from Peoria. I have no idea if this is a "mom" concoction or if is a mid-west thing, but my mom always made us grilled cheese with honey...The cheese was (I am a kid from the 70's-80's---OLD) always from the "brick". I think all Gen X'ers know what I mean, but if not. It was that good ol' go too called Veleeta. Not the slices you get today, but the 12 inch long, by 4 inch by 4 inch brick that she cut to our liking..Sometimes, the cheese was a 1/4 inch thick...But hey...Back in those days no one died from fatty processed food...Anyway, not saying try velveeta, but any cheese will do...OH, white bread is a must with salted butter on both ends...then once melted and browned, peel it open and pour honey on it....close it up and enjoy....Or, just have a side of honey to dip it in... Another-Side note...Toasted white, with peanut butter, honey, and bacon....I think that was a true mid-western thing...My sister loved it...

Mayo to fry the bread in... nooooooo... Bah. No no no. I've done a taste test with this. 10 people involved. Didn't even tell them I wasn't using butter. It looks beautiful when done, even browning. And it doesn't taste bad. But every one of those 10 people (and myself included) immediately knew a difference and it's inferior to butter.
@samgrant835 ай бұрын
The rarebit sauce should have some English mustard in it really, rather than the Dijon in the butter, plus some cayenne pepper too - it needs much better British cheese, eg some Caerphilly, real Cheddar, and Wensleydale - it should have some bite! Rarebit doesn't need serving on top of a sandwich - it's fantastic just served on some toasted bread. I'd go with Stephen's as the best of the bunch, hand's down.

The composition of that frankenwich seemed a bit much. If it were me (granted you are the creator of the video), it should have gone; For the cheese blend, shredded red cheddar from Babish, shredded fontanella from Stephen, and the shredded Tillamook cheddar from J. Kenji, mixed with that grated chorizo he had as well. Then thinly sliced avocado, and the bacon cut into strips on the bias, and place the two in alternating layers on one side of the sandwich, place the cheese and chorizo on the other with a liberal dose of Stephen's sauce, of which replacing the oil with the bacon fat. Do the dry method, which you did, and then the dijon compound butter, with a slight touch of the kewpie to help with cohesion, and then the weights on it after applying the compound butter.

I wish you had eaten Kenji's sandwich without the hot sauce unless the sauce was part of the build. Outside sauces skew any of the results.because you aren't judging the sandwich on just its own merits.

I may not be a KZbin chef, but I will make you a damn good grilled cheese sandwich. Every time you come over for one, it will be different. The only constant will be bread, any kind of bread, and cheese, any kind of cheese. I love adding all sorts of things depending on what's in the fridge or in the pantry. Grilled cheese is just one of those things that's endlessly adaptable.

Anytime you add a meat or significant ingredient (for example an egg) it is no longer a grilled cheese. It is now grilled ham and cheese or grilled egg sandwich... A spice/herb or two is fine but an entire sauce (especially this one) takes it out of the "grilled cheese" category. Great video Adam, as always.

To me, a grilled cheese sandwich is cheese, bread, and a fat to toast it in. Those are not grilled cheese sandwiches, but ... whatever. I was mildly interested, and amused, by the three contenders. I didn't pick a "winner" since none were grilled cheese sandwiches. Bacon, avocado, chorizo, bunch-o-stuff with cheese, sandwiches maybe? Until your Frankencheese creation: Drool-city man. Whatever you call your not-a-grilled-cheese sandwich, it looked incredible.

None of these are grilled cheese sandwiches. They are sandwiches with cheese as an ingredient. But, all the superfluous stuff like meats and sauces, by definition make it NOT a grilled cheese, Adam.
