LEARN HOW TO MAKE THE MOST UMAMI PACKED MUSHROOM CHICKPEA RICE RECIPE TONIGHT!
LAY HO MA (how's it going in Cantonese)! I bet you cannot just have one serving of this incredibly savoury recipe! Join me in this episode and learn how to make an extraordinary umami packed mushroom and chickpea rice recipe tonight! Let's begin
Ingredients:
400ml canned chickpeas
3 large king oyster mushrooms
1 tsp smoked paprika
1 tsp sweet paprika
1/2 tsp cayenne pepper
pinch of salt
2 tbsp avocado oil
3 pieces garlic
2 cups basmati rice
3 tbsp chili oil ( • Most addictive Red Chi... )
1 tbsp tomato paste
2 cups water
2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp toasted sesame oil
1 tsp Chinese black vinegar
1 tbsp maple syrup
14g fresh Thai basil
Directions:
1. Pre-heat the oven to 400F. Drain and rinse the chickpeas. Then, line a mixing bowl with some paper towel and add in the chickpeas. Toss to dry the chickpeas, then remove the paper towels
2. Chop the king oyster mushrooms into cubes slightly larger than the size of a chickpea. This way, they will cook together evenly. Add the mushrooms to the chickpeas
3. Add the smoked paprika, sweet paprika, cayenne pepper, generous pinch of salt, and avocado oil. Toss to combine. Then, spread onto a baking tray lined with parchment paper
4. Finely chop the garlic. Use a sieve to rinse and drain the rice, then set aside
5. Heat up a sauté pan to medium low heat. Add the chili oil followed by the garlic. Stir and cook for about 1min. Add the tomato paste and cook for another minute. Add the rice. Turn the heat up to medium high and give the pan a stir
6. Add the water, give the pan a quick stir, then do not disturb any further. When the water begins to bubble, allow the rice to bubble away for about a minute or so. Then, cover and cook on medium low for 15min
7. Place the chickpeas and mushrooms into the oven and bake for 20-25min
8. Mix and combine the soy sauce, dark soy sauce, toasted sesame oil, Chinese black vinegar, and maple syrup. Chop the fresh Thai basil and set aside
9. After 15min, turn the heat off and let the rice steam further for 10min
10. Plate the rice and spoon over some of the sauce. Top with some of the roasted chickpeas and mushrooms. Sprinkle over some of the chopped Thai basil and serve!

awsome recipe, i love it! i really had to laugh when you said "the rice has not been seasoned yet" after you put the rice in a pan with tonns of garlic and a nice amound of super flavourful chilli oil 😂

I was thinking of maybe using 3 tablespoons of avocado oil, and mixing in Korean chili flakes or red chili flakes for the rice starter. I like some heat, but have found that the chili oil is too intense for me.

I guess if you want and can't use too much chilli or want to give this a different twist you could use achiote paste or oil to create that beautiful red color rice. This looks yummy and I am quite inspired to make it.

I have so many rice recipes and so many chickpea and dal recipes already in regular use at home. I also have so many rice and dal recipes stored away for later use in my beloved recipe app, so I did not think I needed another one - wrong! This is a great collection of flavors, textures and just so happens to be plant based and easy. Thanks Wil! At the moment I cannot have much capsaicin in my diet due to a GI disease, so I use extra paprika and a careful use of dried Kashmiri red peppers, Aleppo pepper, and a bit of milder gochugaru. You can also bump up the flavor with scallion and/or garlic oil. It’s not perfect, but it works. I don’t want others who may be in my same situation to miss out on this delicious recipe because they cannot tolerate the chili oil.

I feel your pain! I love chili oil so much but I need to be careful because I have Crohn’s so too much spicy can send me into a flare up but it tastes so gooood😓🥵

Saw this recipe today. Made it for dinner. Was missing a couple items so had to make a few substitutions. OMG was fabulous! So much flavor and beautiful textures. I’m a vegetarian but my hubby is not. Served his along side roasted duck - he’s still raving about it. Keeper recipe for sure. Thank you!

Wil, I stumbled onto your channel looking for Asian recipes, coming back from a trip to Japan, and I very quickly equipped myself with gochugaru, dark soy sauce etc and found out nice asian supermarkets nearby. I am like others here who find Yeung Man's presentations hypnotic and dream-enducing. I proudly keep my bottle of Chili Oil on display. Last night I made this recipe above and undetstood the umami blend of flavours but I missed something. Mouth feel. It was too dry for me. Everyone's sense of savour is different. As always your recipes are simply delicious…I’m not vegetarian though these meals could make me change my mind. When I feel the need to eat meat or fish I just add shrimp, chicken or beef. Happy New Year to you and everyone involved in making your channel so awesome.
